    I have made this recipe quiet a few times, and it really is great. Made it yesterday and served it with your chicken tikka, potatoes in yogurt curry and a tomato and pea pilau. What I did differently yesterday was to roast and grill the veg until it started to blacken lightly at the edges, to give it that smoky flavour. It really, really worked. Thank you for your lovely recipes.

    I’ve been looking for a route into vegetarian cooking for some time and came across your channel. Your presentation and enthusiasm for the ingredients and dishes is contagious. We have family coming over tomorrow and I want to prepare a vegetarian curry dish and this looks to be absolutely perfect.       Jas Bains garam masala is easier bought in the store. It is a bit difficult to make in home and the market one is usually the right mixture in proportions.
      It is a mix of almost 7 or more ground spices. I hope you enjoy the food.

    I have recently found your channel. I’ve been cooking Indian food for many years but the results I have had following your recipes have been excellent. Last night I made your mixed vegetable dish, although I decided to roast the vegetables before putting inapte the sauce. What a delicious sauce. It’s was the best mixed vegetable curry I have had. Now I’m going to make the sauce again and have it with chicken. Thanks for all your beautifully presented videos.

    We just made this curry and it's really delicious! Even though we underestimated the spiciness of the dried piri piri pepers we had and added more than we should have :p But besides the spiciness, the flavour was amazing!

      @@FoodwithChetna I have made it several times more since I left that comment... it's a wonderful dish and the paneer adds enough protein to make it a lovely one-dish lunch with rice or roti. Again, many many thanks for this wonderful recipe.

    Hi Chetna, thanx for a great and tasty recipe. Have made it twice already. However, both times it came out really strong even though reduced chili flakes and chili powder. Why is this, could it be the ginger? Is it possible that grated ginger will lose some of its strength?

    Looks fabulous and the naan bread recipe in the link looks the ideal accompaniment. Was wondering what to do with some chicken thighs on Friday, this looks like it will fit the bill.     I was rewatching your season of GBBO and I was wondering if you'd consider making the Dobos torte that won you Star Baker?     Looks absolutely delicious. Can I omit the dairy ingredients altogether or would I need to add something else to make it creamier, like more pureed cashews? I need to make it Vegan-friendly

      Sparkasaurus you could use a vegan yogurt. My favorite is Coyo if you can find it, but any plain unsweetened vegan yogurt would probably work. You could just leave the paneer out or substitute a nice firm tofu for it. Hope that helps🌻

      Yes you can skip the paneer but if you can use cream then add the same amount of coconut milk, that will taste great too.

    Another option for kasuri methi, that is if you get methi or fenugreek leaves, is to just heat the leaves in bursts of 30 secs at HI power in a microwave oven, till they get crisp and crumbly :)

    Amazing! By the way - I ordered Kasuri Methi from India through Ebay about two weeks ago and it's here already! It's an option for folks who can find it where they are.
    I'm lucky enough to live very close to and Indian store and still they've told me that it's one of the spices that are hard to come by for some reason.

      halloumi is not great for curries, you can skip the paneer if you like.

    This looks amazing! Indian cooking always intimidate me because of all the spices. I have an Indian grocery nearby, and I want to know what basic spices to keep on hand and how often to purchase them. I don't want a bunch of old, tasteless spices because I bought too much and never used them.

    In recipes I seem to avoid when told to add cashew. Anytime I added before and grinded it with a soup blender it’s very bitty/grainy in my mouth. I dont like the texture! So today I saw someone else make a curry using peanut butter and it gave me the idea of using cashew butter instead! Because it’s incredibly smooth! What’s your thoughts on this?

      Tia, before putting it in if I grind it, I usually make it into a powdery form using a mortar and pestle.... So try that maybe

      Yes you could try the butter but I would not recommend it, you can skip it and add a little bit of extra cream.

      Jessica Matta try almonds! Just soak them in water and peel them before grinding :)

    If I wanted to only cook this for 2 people so using less veg would I still need to use the same measure of spices ?

      well you can halve everything or just make this amount, eat some and eat the rest over the next 3-4 days. It will keep in an airtight box in the fridge well.

    the taste has come out great. I guess I didn't puree the onion/tomato mixture enough because I have small pieces of cashews. realized it too late :-) next time...
    Also, I softened the vegetables in hot water for a few minutes while the sauce was cooking...
