I have made this recipe quiet a few times, and it really is great. Made it yesterday and served it with your chicken tikka, potatoes in yogurt curry and a tomato and pea pilau. What I did differently yesterday was to roast and grill the veg until it started to blacken lightly at the edges, to give it that smoky flavour. It really, really worked. Jas Bains garam masala is easier bought in the store. It is a bit difficult to make in home and the market one is usually the right mixture in proportions. It is a mix of almost 7 or more ground spices. I hope you enjoy the food.

We just made this curry and it's really delicious! Even though we underestimated the spiciness of the dried piri piri pepers we had and added more than we should have :p But besides the spiciness, the flavour was amazing!

Sparkasaurus you could use a vegan yogurt. My favorite is Coyo if you can find it, but any plain unsweetened vegan yogurt would probably work. You could just leave the paneer out or substitute a nice firm tofu for it. Hope that helps🌻
Another option for kasuri methi, that is if you get methi or fenugreek leaves, is to just heat the leaves in bursts of 30 secs at HI power in a microwave oven, till they get crisp and crumbly :)

I'm lucky enough to live very close to and Indian store and still they've told me that it's one of the spices that are hard to come by for some reason.

This looks amazing! Indian cooking always intimidate me because of all the spices. I have an Indian grocery nearby, and I want to know what basic spices to keep on hand and how often to purchase them. I don't want a bunch of old, tasteless spices because I bought too much and never used them.
In recipes I seem to avoid when told to add cashew. Anytime I added before and grinded it with a soup blender it’s very bitty/grainy in my mouth. I dont like the texture! So today I saw someone else make a curry using peanut butter and it gave me the idea of using cashew butter instead! Because it’s incredibly smooth! What’s your thoughts on this?

halloumi is not great for curries, you can skip the paneer if you like.

Tia, before putting it in if I grind it, I usually make it into a powdery form using a mortar and pestle.... So try that maybe
Yes you could try the butter but I would not recommend it, you can skip it and add a little bit of extra cream.

Jessica Matta try almonds! Just soak them in water and peel them before grinding :)
