    I'm from a brazilian state that used to be one of the top sugar-cane producer in the 1600s, and the specific city my family's from was said state top rice producer (so much so that the demonym for whoever's born there is 'papa-arroz' which translates to 'rice-muncher'), so we have a version of this!
    Chef Jean-Paul's version seems more refined, with a greater variety in texture, I'll definetely try it next time! Here, we use coconut milk instead of dairy and melassus instead of raw sugar
