Also a good cinnamon roll doesn't need that white sugary goop poured all over it which is the second thing to contribute soggy gooey dough.

IQF chicken, or vacuumed packed and quick frozen chicken, can appear to be pinkish when cooked because of the myoglobin and or nitrogen gasses. It stains the meat a little bit. In fact, by the way the chicken looks, it seems over cooked a bit to me.
Star Anise absolutely ruins desserts. Leave that mess in the broths where it belongs. Keep it out of desserts entirely. The flavor is too strong and ruins all desserts.
