As a Nigerian who spent the first 5 years of his life in the village and most of my family is still in the village, let me just say IDK what that food was but it wasn’t Nigerian food. Breaded fish in Egusi soup is INSANE and I’ve never seen Egusi soup that color in my life. Also WTF is Chicken Suya? Suya should be red meat. They def got some non Africans cookin Thai foods 😂

I recommend you go to an African grocery store and actually ask them where a good place to get authentic African food is

Jollof doesn't even need sauce, it's kinda sad that they have you trying these sorry imitiations of Nigerian foods. 2. That Egusi looks more like our regular stew called Obe ata(a popular Yoruba stew in Nigeria). Egusi is never and can never be that red except someone fucked it up, added a shit load of red oil and paste which in itself is wrong. Hopefully, one day you can experience truly authentic Nigerian food with proper flavors and spices all the way through cause these American vendors have me close to tears.

But I realize that in the business you have to stay consistent with putting out the same fresh, delicious food every day. You have to write down your measurements for your recipes and how many you serving. Small details to each dish matters as well. Simplicity is beautiful. Hire ppl who have the same passion for putting out great food and pay them well. I love watching you cause you give great corrective criticism to lots of establishments to be better. ❤

I have never seen egusi soup that looks that dark, looks completely like something else not egusi. Come to Austin TX and try my egusi and jollof rice you will not regret it and I am not even Nigerian but I am African and a chef.
If your still in Missouri jefferson city has a good bbq place called sweet smoke they make great ribs and mac and cheese. Also aris pizza makes great greek pizza.
They probably didnt season the fish heavily so its not overly salty because they want you to pour that sauce or dip it in the sauce you tried with the jollof rice
