  • Patatas bravas, a beloved Spanish dish, consists of white potatoes cut into irregular cubes, fried until crispy, and served with a spicy tomato sauce and sometimes aioli. The dish is commonly found in tapas bars across Spain and is known for its bold flavors. The spicy sauce, typically made from tomatoes, garlic, Spanish paprika, and red chili peppers, gives the dish its characteristic bravura, meaning "fierce" in Spanish. This popular snack is often enjoyed with a cold drink and shared among friends, making it a social and flavorful experience.
    Today, I’m using the Air Fryer to cook the potatoes.
    NOTE: Aioli and mayonnaise are similar; emulsions are primarily made from oil and egg yolk. The key differences lie mainly in their flavor profiles and traditional ingredients.
    Aioli traditionally includes garlic, which gives it a distinctive taste. Mayonnaise is typically made with just the essential ingredients (oil, egg yolk, and an acid like lemon juice or vinegar) and has a milder flavor. Sometimes, mustard is added to mayonnaise for flavor and to help stabilize the emulsion.
    Aioli is commonly made with olive oil, imparting a more robust, distinct flavor. Mayonnaise is usually made with a lighter, neutral oil like canola or vegetable oil, which doesn’t overpower the other flavors in a dish.
    Add a little garlic to the mayo and a splash of olive oil for a quick Aioli.

    Taking Cooking food back to basics.
    Ingredients:
    For the potatoes
    - 1 kg (about 2.2 lbs) potatoes, peeled and cut into cubes
    - Olive oil
    - Salt to taste
    For the bravas sauce
    - 2 tablespoons olive oil
    - 1 onion, finely chopped
    - 2 cloves garlic, minced
    - 1 teaspoon smoked paprika
    - 1/4 teaspoon cayenne pepper (adjust according to spice preference)
    - 400 grams (14 oz) of canned chopped tomatoes
    - 1 tablespoon tomato paste
    - 1 teaspoon sugar
    - Salt and pepper to taste
    For the aioli (optional) - See NOTE in the description above
    - 1/2 cup mayonnaise
    - 1 clove garlic, minced
    - 1 tablespoon lemon juice (optional)
    - Salt to taste
    oven to 400°F (200°C) - 20 mins - 420°F (210°C) 20 mins
    Air fryer 380°F (190°C) - 20 mins - 400°F (200°C) 20 mins

      I agree, and most the their thumb nails say "take one egg I have never eaten such amazing pork, my grandma taught me" they do have a hundreds of thousands of views for what looks like inedible meal. Oh well I will stick with being honest. Thank you. Best, Rik

    I love it, I don't make the sauce the same way, a bit more liquid, everyone has their own recipe, potatoes fries 1 time in a fryer, (I'm from north of France 😁 cooked like a French frie), but a tapas I appreciate !

    Nice job Rik. For the last few months I've been concentrating more on Spanish Tapas than anything else. They tend to be relatively healthy and really are perfect as shared appetizers for small groups of friends and family, as they are meant to be.     Gosh Rik, these amazing recipes keep hitting the right spot with me.
    This is a perfect dish for a afternoon in the garden on a hot sunny day (if we ever get one this yr in UK) with a few glasses of cider for me.
    I love my mayo straight from fridge so i would do the same with the alioli sauce

    Im in Spain at the moment. Yum. I think you need to be careful with low sodium salt. I believe it relies on higher potassium salt to ramp up the saltiness. Low sodium is a good idea for people with kidney problems but potassium can have adverse effects on the heart

      Sorry, but that's incorrect. Sodium and potassium need to be equally balanced in the body and we need to consume equal amounts of it for good health. You can take high amounts of sodium as long as you ensure you get about the same amount of potassium, or you will have health issues. The belief that taking too much salt causes HBP and heart disease is a myth. What kind of salt?? Table salt contains only sodium. Of course you will have issues, because you end up with a lack of potassium. Full spectrum salt contains 84 trace minerals, including less sodium than table salt; and potassium is the second component. Sea salt which is naturally dried contains the full spectrum of minerals. It is light grey instead of pure white, and is sold as Celtic sea salt or French sea salt. A commercial full spectrum salt is PanSalt™. And let's not forget, potatoes are rich in potassium and has negligible sodium - no wonder potatoes and good salt go so well together! 😋

    enjoying watching your scissor chopping technique. I feel vindicated about using kitchen shears for this task as I can point to expert advice. I also see this tomato sauce as a method of using up my remaining tomatoes calling out for immediate use. Waste not want not.

    I loved potatoes baked in their skins. So much nicer than just chips. I've not heard of this dish, but I'm looking forward to trying it. I guess you could have the crispy potatoes with a cheese sauce too. Tomato sauce one week, cheese sauce the next week. I love the variety of dishes that you make. Thanks for sharing, Rik.

    I chop herbs the same way as you do with tomatoes, just add them to a glass or beaker and chopped with scissors. So easy...

    Hi Rik...I love you measurements as I wash a splash or dollop that is my cooking language.
    I am having to now convert my dollops, splashes and smidgens to grams to write for my daughter in a recipe book a nightmare.
    Do you have a Tomato Soup and also a Mushroom Soup recipe that I have missed.
    I do soup couple times a week for lunches 2nd day soup always better but heck those 2 soups defy me I have never got a good taste or looking soup .

    Tapas culture is unique and fun. I was in Spain many years ago and was impressed buy their whole culture, one of the friendliest people in Europe. That said...years ago I lived in Denver for a few years. Then, all the bars had a two hour happy hour, during which they served pretty good food for free. One place would have small sliders, another chicken wings, another chimichangas or egg rolls etc. etc. You just had to buy a drink. I would go around to 4 or 5 bars and manage to eat dinner, free :) I did this almost daily lol. This dish here is deceptively simple but unbelievably good. Thanks Rik.

    A cracking job there Rik, proper scoff . i had that many times in Tenerife, they also served it with MOJO sauce pronounced moho, its was very similar to yours only its made with jared red peppers and cumin its hot or mild both both were ace. Well done. Canarian ;potatoes next ?????? Lol

    This is a timely dish for me because I normally don't keep potatoes in my house but just bought some yesterday. I have an aoili sauce in a squeeze bottle and here in Arizona it will always have a kick to it. (Hot sauce added) I made some Texas Red Chili yesterday and will use that in the bottom of my bowl as you recommended. Today I woke up later than usual (5:30am) and you beat me by already having posted your video. What a treat to watch you every morning while drinking my coffee.😎

      @@chiccabay9911 yes generally electrolytes but there is a specific balance with respect to potassium. One allows muscle contractions the other muscle relaxation. Both of which essential for good heart function.

    You're mixing up two different tapas, patatas con allioli (aioli) and patatas bravas. Real allioli has no mayo or egg, but you made the fast cheat option with garlic mayo, which many people do, in which case you can mix a bit of good quality olive oil into the mayo to mimic the original taste. Allioli means (all) and (i) oil (oli) and you need to beat until you get an emulsion with the same consistency as mayo.

      Aioli is made up of Olive oil, egg yolk, garlic, lemon juice, and Salt. What is MAYO made of Neutral oil, egg yolk, lemon juice, and salt - just different oil - So by adding a little olive oil to mayo, you have aioli - I'm really pleased I know how to cook - after more than 40 yrs I have learned to adapt.
