    I overcooked the liver while messing around with the camera. It wasn't overcooked like the bottom of a flip-flop, but it was not as soft as usual. Also, too much mashed potato! What a day! Happens to all of us!

    Ingredients:
    - 500g beef liver, thinly sliced
    - 100g streaky bacon, chopped - • How to make AMERICAN B...
    - 2 large onions, thinly sliced
    - 2 cloves garlic, minced
    - All-purpose/plain flour
    - 2 tablespoons vegetable oil
    - 50g butter
    - Salt and black pepper, to taste
    - Fresh parsley, chopped (for garnish)
    Whisky Cream Sauce:
    - 1-2 tablespoons of butter
    - 1 small shallot or onion, finely chopped
    - 2 cloves garlic, minced
    - 120ml (1/2 cup) whisky
    - 1 cup beef stock
    - 250ml (1 cup) heavy cream
    - 1 teaspoon Dijon mustard
    - 1 teaspoon Worcestershire sauce
    - Salt and black pepper, to taste

    I overcooked the liver while messing around with the camera. It wasn't overcooked like the bottom of a flip-flop, but it was less soft than usual. There was very faint pink in there-I needed a magnifying glass to see it. Also, there was too much mashed potato! What a day! It happens to all of us!

    I see that I'm not the only one who love liver ! ( As a side dish " always mashed potatoes " and beets 😉 😋) .It is amazing how English cooking reminds me of Polish one 👍Unfortunately in Canada our cooking is not much appreciated - our restaurants almost don't exist

    Mom cooked liver and onions with bacon all the time. It smelled so good. Then I would taste it and NOPE! I tried it every year. Finally, when I was 27, I decided that I liked it. Mom actually over cooked it. It is so much better when you don't.

      I had a similar experience. I hated liver until I was in a restaurant in my thirties and after a waitress brought an order to the table next to ours that wonderful smell wafted over and my stomach grumbled, telling me to go over and steal it, and eat all of it!
      Of course I ordered my own and my life changed for the better. Ever since I’ve lived it. That whisky sauce does sound great.

    I haven't eaten liver in nearly half a century. I simply never liked it. Recently, I was convinced that its nutritional benefits are worth giving it another try. I haven't found a recipe I thought might be worth trying until now. The sauce and baked onions look like game changers. I need to try this.

      Try chicken livers instead. Harder to overcook. I like them with onions, lots of celery, and some canned diced tomatoes. Mushrooms and potatoes are a nice addition, too. But maybe next time I make it, I'll leave out the tomatoes and use that whiskey sauce instead.❤

    Another brilliant bit of cooking, we used to have liver every week with my mum , dont have it that often now , because believe it or not you cant always get it , how sad. something my Mrs cooks when we can get it is lambs hearts, soaked overnight trimmed and sage and onion stuffed, and casseroled for 2hrs, the taste is outstanding, but most people would turn their nose up at it .I am going to make one of your whisky sauces at the weekend to go with my sunday roast.     My mother used to make liver and onions when I was a child. It wasn’t a favorite, but I would eat it with no problem. It’s been decades now since I last ate that, but I would definitely try your recipe. I probably would also add sliced mushrooms just because I like them. To the store now….

    Looks great. Mum would make fantastic tender liver and onions.. It would be a hit or a miss with me if I ate it... Later on as an adult I discovered a simple stir fry with liver, nicely sliced. I use sweetcorn peas small bits of broccoli and rice... Sherry was used in cooking. Husband won't eat 'offal' so no liver kidney etc... I love haggis.... But now it vegetarian haggis as proper haggis is too spicy and greasy for me now... This looks fabulous....

    Best liver and onions I have ever seen. I've had beef, pork, chicken, rabbit and venison liver in my time. Venison and young beef are the best. I don't know why the cost has gone up. When I was young you could buy it for less than a doller a container. My folks said back in the 20s and 30s butcher shops gave it for free to customers. Still a bargain for those starving years instead of just noodles.

    My father now 22 years past. Would have called what you made a sample platter. He could have ate that himself. You could tell he was Welsh/Irish/German. I could smell this cooking through the video. It was one of his favorites.

    Liver, Lungs (haggis),Kidneys and Heart are all good cuts. They are all factored into my cooking. I do make a liver and bacon in a red wine gravy but never considered it with Whisky cream!
    My list of dishes to cook is growing fast and 90% are from you. Easy recipes with no stress advice and a vision of endless variations. Love it Rik!

    I used to coat my liver in seasoned flour, cook and set aside. I then cooked the onion and bacon and added a can of diced tomatoes, return meat to pan and added water, the flour then made its own gravy, served over mash and peas🤤 In Australia 🇦🇺 now liver is over $5 for a smallish piece 😂 also no pink for me 👍💜

    Liver flip-flops were common at least once a week at my Granny’s table when I was a lad, ahhh happy memories…I too like it better pink, soft and unctuous. It’s how it should be and makes the best pate. Thank you Rik

    I haven't ever had this a stove top cooked dish. I grew up with liver and bacon casserole, lots of onion, carrots, and good, thick brown gravy.

    Liver, bacon and onions was one of the worst things my mother made when I was a child - liver overcooked, as tough as shoe leather and twice as dry; tasted like something that was swept off the side of the road; dusted with rust and kissed with dirt. I vividly remember sitting at the table until well after midnight several times because I refused to eat it; once it was forced down I'd definitely regurgitate it - at the table. Not my best childhood memories....
    Then as an adult I tried liver and onions at Morton's Steak House in Chicago as a dare (a bet for a $100 bottle of champagne) - it was a different thing entirely. Sweet, savory, beefy and medium rare - I ate the whole plate and wanted more.
    I wouldn't cook it this way, but that whiskey-cream sauce would be absolutely fantastic on a properly grilled piece of beef liver.

    Oh Rik, I haven't even started watching this vid but you gotta laugh!! SIX hours ago I had my dinner here in Australia....guess what I had....... yeh Lamb's Fry with bacon and onion sitting on mashed spud with 2 cheeses and peas.
    I have a very similar air fryer to yours and used a glass casserole dish and it worked perfectly!!
    Now to the vid!!

      OK Rik.....I am having brains, bacon, grilled tomato and poached eggs on toast for breakfast. The brains have been slow cooked in salted water so all I have to do is crumb and cook 'em.
      PS: I really do like your twist on the superb dish....I think it is OFALLY good!! hahaha

    I Did it! And it is great! Very different from any liver dish I've ever had before. The sauce is velvety and smoooooooth, I don't think it is possible to undercook the liver, but it still came out soft and delicate, yum yum yum. The only mistake I made was using rum instead of whisky (the only high-octane liquid I've had at the moment), because whisky goes much better with savory dishes. And I had to make an extra trip to the village store to buy more home-made bacon because the first piece mysteriously disappeared from the cutting board when I turned away to reach for the knife. My dog must have tip-toed into the kitchen, because after 20 minutes of searching the kitchen I found an empty wrapper on living room sofa. All in all, it is very new to me and very, very, tasty! Thank you, Monsieur Le Chef for the recipe! And I will use the rum for hot winter tea only.

      My son’s cat has a penchant for lamb, it once ate 200g of cooked diced lamb off the stovetop. We were all blaming the dog (border collie who is too smart for his own good) until we noticed the cat was limping. On inspection we found the cat had burnt her paw on the hot plate. Bad kitty. She too was forgiven but not forgotten, we now cover any cooked meat when we leave the room even for a minute; that cat is fast!

Before my present Beagle I used to have a very crafty Vyzhla, who once inhaled a roast duck + everything elso from the Dutch oven he knocked first to the floor from the table. "Inhaled", because the time lapse from the moment I heard the pot hit the floor to the moment I rushed into the kitchen was maximum 1 minute. The pot was already licked sparkling clean. The duck was roast with apples, prunes and lots of marjoram.

    Brother and I grew up eating liver and still enjoy it. I did not have any whiskey or heavy cream, so I made the gravy without whiskey and substituted evaporated milk. It was still very, very good.

    I worked on a farm two and a half decades ago. As well as the meat I used to bring home sheep's liver, kidneys and heart. I loved them fried for breakfast with a thick gravy..mmmmmmmm. :)

    Hi Rick great dish Liver ( I perfer pigs liver myself its a little more firm ) but what ever Ox, Lamb, Venison its all great with bacon and onios to this day it is one of my favoruate dishes simple easy I shall try your twist on the gravy/ sauce.

    I usually flash fry liver about 60secs a side, or else it's in the oven low and slow with everything else for an hour. Anything inbetween I get flip flops - like we used to get at school...

    Looks delicious. I wanted to say I'll be right over. I have not seen beef liver in a very long time in our grocery stores. My grandma used to make it with apples and onions, and so have I. Definitely will try it your way if I can get my hands on liver. My hubby will run for the hills. It will be pizza night for him.

    Mmmh yummy I like this dish so very much! It's interesting that we folks here in Austria do it cook roasted or like you do with creamy sauce only without the whisky...I' ll give it a try next time WITH it.

    I've recently discovered a liking for liver after finding out that the bitter taste can be removed by coating with bicarbonate overnight (important to wash it off before cooking. Makes a great stir-fry.

    Love liver and bacon since I was a kid(uncle had a farm, fresh calves liver was a specialty 1,2x a year) delicious!
    I've also made it Italian style, with Marsala wine😋
    And then there is always Spagetti a la Caruso, chicken liver in tomato sauce😋

    Love liver and bacon with onion gravy.
    Used to get it at school - so many other kids hated it. My mum also made it. She always soaked the liver in milk for a bit.
    You occasionally still find it served in some cafés in UK - the none poncy ones
    I believe Che Guervara was very particular about frying onions.
    Will give this a try

    So far between each steps use 250g of butter, wow. I can tell you are from an Irish background and we put the French to shame when it comes to butter. Even though I'm a kiwi with Irish heritage.
