This recipe made another successful dinner with happy full belly teenage boys! I used the Airfryer to cook the chicken, to avoid the extra oil from deep frying. The chicken turned out so flavorful and juicy inside. I think I will substitute all deep frying with the air fryer from now on. Thankyou for your channel Jamie!
I have never made a good kong pao chicken. Made this for dinner and it turned out delicious!!! I just worked with what i have at home. I replaced black vinegar with balsamic vinegar and omitted the cooking wine. Still delicious!! Thank u for the video!!

A couple of feedback. 1) If dried chilies are as spicy as bird eye chilies, then don’t need to put both. I used only 5 dried chilies and my mouth is on fire. 2) I fried Sichuan peppercorns with oil then remove them before adding in onions garlic, gingers etc. 3) I added cashew. Sometimes peanuts after adding shallots. 4) for 4 deboned drumsticks, I only add 1/3 cup of oyster, dark soy sauce water.

The sauce can be modified to individual tastes and can be used for other stir-fried dishes. You can do so much with it! Don't want chicken? You can substitute any other meat or seafood to make it. I like to substitute walnuts for peanuts in my Gung Pao. It gives it a deeper, smokier flavor! It's also an authentic Chinese dish, and we Americans actually WANT that. Yes, we like fortune cookies, but we know that they are not Chinese, where Almond Cookies are. Hot and Sour Soup and Har Gow are both very popular among us Americans. The more we research our past, the more we learn how mistreated the Chinese railroad laborers were, how our own government tried to marginalize and ostrasize the Chinese and Asians, and how the Asians rose above the hatred and villainy of the 1882 Chinese Exclusion Laws, to become some of the most productive people in our society.
