This might be universal. I live in upstate NY and have been eating burgers and steaks like this since I was a kid. Smahsing onions and garlic into beef is delicious. Flavor comes from the carmelization of the sugars in the fat.
@@mountainair yea they definitely have them all over the place I've had a couple in San Diego when I lived out there. Have you ever seen the burger scholar videos with George motz? It's rad he travels around the US checking out the local regional burgers and gives a brief history of them. He also shows how to make each one at home it's cool, there's some real interesting stuff out there.
You can get good results slicing the onions on an ordinary cheese grater--the kind that's shaped like a rectangular box with a handle on top. Use the holes on the side that are shaped like a minus sign. Also, avoid pressing too hard on the onion as this would make the slices too thick.
Duhhhhh ...... I've seen those rectangular graders since I was two and it never occurred to me to use that side slicer as a mandolin. 🤦🏻♂️ Thank you! Btw, I almost caught my finger off using a regular mandolin that was missing a safety piece and I was being all cocky because I'm a musician and I have super high dexterity and I thought I could handle it and I fucked up lol. I brought this up at my friend's house were about eight of us were watching Sunday night football or something like that and I mentioned it and everybody but one other person said that they had injured themselves on a mandolin. So now I use the safety glove that it comes with and I used a little prongy thing that sticks into the onion and now I'm ultra careful because that happened about a year and a half ago and I'm still not fully healed. My skin is healed of course but I can't feel anything in an area about the size of a pencil eraser.
@@coppulor6500 Some of those who posted videos about making smash burgers show them using fairly expensive onion slicers. I was pointing out that you can use an ordinary, inexpensive cheese grater so anyone reading my comment wouldn't waste money and counter space on a big, expensive slicer.

good video. We do mushrooms sautéed in butter in a separate pan. burger cooked just like this (same Lodge pan, even!) with kosher salt and plenty of pepper. onion on bottom, mushrooms on top. no sauce or pickles necessary. good eating!
This is how burger should be done. No gimmick, no “RUclips special content steps”, literally what every burger needs, the only thing I’d change is some better buns, a little bit of mustard. Bang on
Just did this I double decker my burgers and made them into minis and added tomatoes sooooo good and so quick I served em with sweet potatoe fries DELISH ❤
10/10 copied this recipe and it took like 5 minutes to whip up. I didn't have buns so I used toast, so I didn't steam the toast. But those onions were so good and the meat was super thin and had a great crust. Thank you for a simple recipe. I will be eating 1,000 burgers a week thanks to this video 😂😂

@@Jay-okc thanks man. In England you find it here and there and most often it’s with mayo which I think it can do without. I do use a special seasoning and red onions on mine and it’s outstanding. I’m intrigued about the real deal Oklahoma sauces, time for some research. Thanks again Jay!
