From a point of view of a Vietnamese, I think Nick did very good job in cooking and Roger did pretty good job in review as well. Yes, we don’t bland noodle in broth, should be a separate pot of boiling water, drain well, then add very hot broth into the noodle bowl with thin sliced raw meat and yes, don’t forget green onion, white onion and cilantro. 😊

Nick has finally pho-filled his Uncle Roger's desire to approve his cooking
I’m Vietnamese and absolutely love pho. For a bit of clarification pho is a classic Vietnamese dish and is known for it’s hot broth that is extremely hot and is poured on to raw meat that instantly cooks because of the broth. We also roast our spices to add extra aromatics and more flavour, I’m not sure about others but I found that my family uses slightly wider rice noodles and the additional pork meatballs. 😀
As a people who live in Ha Noi (capital of Vietnam and the best place to find Pho) beef is more soft for a rare cook by broth like that, pork will usualy go hard and less fit with the dish than beef. Không đánh giá nhưng thường thịt lợn ko hợp và dễ bị bã khi ăn tái như vậy :) .

In Canada, there are plenty of pho restaurants around there, I am not sure how authentic they are, but they do taste exellent to me. Since I don't always see proper chinese noodle restruants, pho is what I choose as an alternative. As a chinese student, pho has been my life saver for years! My favorate combo is brisket, raw beef and meatball in the classic beef broth, and extra cilantro.

It’s pretty normal.
And lime usually put on the side so when we like to squeeze them in we don’t get burn from the hot broth.

So excited for this video!! Im a Vietnamese here. My family usually cooks Pho without fish sauce. It is mainly because cooking broth with fish sauce for a long period of time usually cause a slight sour aftertaste + darken the broth. We usually leave the fish sauce on the side for whoever would like to add it into their bowl, not adding it in while the Pho is cooking. If you use enough bones, salt, and other ingredients, it shouldn’t taste bland. If you prefer to use fish sauce in Pho while cooking, do not add too much as it will darken the broth. It is usually best to add it in towards the end of the cooking process. This is same with MSG, adding it towards the end of the cooking process helps prevent the sour aftertaste.
as a pho restaurant owner’s daughter, i confidently say that pho without msg is not pho. Pho always has msg no matter the chef say they put it in or not. If the chef says they dont put msg, there are 2 possibles: 1. they bullshit, 2. pho taste like sht :)

That’s just not true. If you have to add msg to your pho, It probably just tastes like shit. Msg is added for its umami flavor, which is what fish sauce can do, but many traditional pho recipes do not add neither fish sauce nor msg. You may be your parents daughter but you ain’t no goddamn chef.
