The chocolate -orange waffle is AMAZING!! I did try it with my GF flour for half of the oat flour (my GF flour is a blend of millet, tapioca starch, and rice) and it was amazing still!!! Definitely on Repeat!!!
I made the waffles today but subbed the cocoa powder for chocolate protein powder and used protein plant milk and it was *chef's kiss*! Protein plus choc waffles.

ok so update: I made the broccoli cheddar muffins - DELICIOUS. made a vinegary spicy tomato sauce to go with them and they were incredible, AND i made the lemon poppyseed cake/bread and OH MY GOSH IT'S SO GOOD. i used Bob's 1-1 GF flour instead of oat flour and it worked perfectly. it's ... insanely.... good.
But first.....CAKE! I’m totally making the lemon poppy seed cake for breakfast! Quick ? Tho, in the video you used a loaf pan, and in the recipe it calls for a 9 by 12 pan. Did you do a smaller amount for recipe testing and filming? Just wanted to check before attempting this deliciousness! Thank you for ALL the gf v recipes! I am so appreciative of the time and effort you put in to make bangin baked goods, and for real pretty much every other recipe of yours!
The pan I used in the video is a 9x12! I actually tried it in a smaller pan with testing and the pan was too small so the bread collapsed in the center

Can I sub the oat flour with almond or coconut? I'm not too much of a baker but these vids are inspiring me to give it another go! I'm just not sure if switching the flours will negatively affect outcome of recipe. TIA!!
No, it won't work the same way! Definitely not with coconut flour. Every flour absorbs liquid differently and has a different texture after baking. For example, oat flour absorbs a lot of liquid and gives a heartier/chewier texture. Almond flour doesn't absorb much liquid at all and makes baked goods soft and crumbly. That's why I used a combination of the two for the Lemon Cake :)
3:09 I am totally a savoury-breakfast person and I have tried making such muffins quite a few times but they always stayed a bit floury. Nothing which bother me too much but when serving non-vegans...that is a different story :D I have heard leaving the batter in the fridge overnight helps but never tried it. Do you have any experience with it?
I really like your recipes! But when I read "spring inspired" I expected something more seasonal, instead of flavours "associated with freshness and enjoyed in spring", as you described it... Still gonna try out some of these though :)

Personally I haven't! I try to use ingredients most people would have on hand or can get easily and I feel like that is more of a specialty item

I added black salt instead of common salt.. it really give it a very eggy flavour..
Nice! Black salt loses flavor with heat, so I usually just like to sprinkle a little on at the end before eating :)

Coconut cream is slightly thicker but I believe it should still work!
