Shidian Stinky Fermented Soy Bean Sauce - Winter Delicacy Born from Straw Nest

Villagers started to make stinky fermented soy bean sauce in November. Usually, we would ferment boiled soybeans for three days and four nights. It will then give out an intense stinky smell and turn stretchy, which is very tasty.
They can then be seasoned and pounded to make soy bean paste, soaked to become the special Shidian fermented soy bean sauce or mixed with oil to become the spicy and appetizing oily fermented soy bean sauce.
The stinky fermented soybean sauce goes well with almost every ingredient, levelling up the texture and taste of both vegetables and meat.

本来想再去一趟高黎贡看看这群可爱的“护猿人”，结果这次常悦站长和如雪就来家里看我了。那里条件特别艰苦，下了车以后得走3个多小时的山路，山上也没有信号，下雨天没电……他们吃的用的都得人亲自背上去，特别不容易，好不容易来一趟家里，多做了些菜～也算是对他们最直接的疼爱了～

I wanted to visit the “Gibbon Protectors” again in Gaoligong sometime, but Changyue the Station Agent and Ruxue came to my house first.
The living condition there is very hard, with three-hour’s walk into the mountain after a long ride. There’s no telephone signal in the mountains and the power goes off on rainy days. People there have to carry food themselves into the mountains, which requires much effort.

She’s the best for sure, I always feel better and more calm after watching her videos. And I see many of the other YT chefs copying her which is the sincerest form of flattery, I guess?
Her and liziqi are probably the most popular when it comes to this genre. And although they showcase similar things, they come from two totally different places and it's really reflected in their work. Liziqi comes from the sichuan mountains, and like those mountains she's mysterious but her videos feel oddly intimate, because we typically are only around her in silence while she works. Whereas dianxi xiaoge comes from the tropical yunnan province, and her videos show us a lot more of her family, friends, and all her village and the surrounding areas have to offer. Her videos give off a warm, friendly, comforting vibe. I love them both so much ♡♡♡!
Her inspiration is Liziqi. And liziqi is on another level compared to Dianxi. Their videos are kinda similar but it's not. They have different personality. And different vibes of videos. And i love them both. 😊💖

I come from Mizoram in North East India.We also ferment soya beans this way.We love them so much.And the banana flower and stem are also a part of our dish.I feel like I'm going back to the time of our fore father's.

這集百看不厭在台灣非常懷念的美食就想到媽媽，40年前餐廳有名的豆酥魚就是曬乾的豆鼓，只有南門市場賣曬乾圓球形的豆鼓，現在已買不到了。
