How long does it keep unopened in the fridge? I have a bottle; Dassai 45 300ml unopen in my fridge and I think the DOB is from 2021. It went straight to my fridge unopen and remains unopen, but now I don't know if it's gone bad or not?
Generally, if unopened and refrigerated, sake is recommended to be drunk within 2 years from bottling date. Hopefully you have it stored upright? Storing it sideways like a wine bottle can affect its flavor because of the interaction with the cap.
If you can find it, try something from Chiyomushi Sake Brewery, Sakiaminato Tottori Japan. Chiyomusubi Junmai Ginjo "Kitaro" is by far the best Sake I have tried. Picture of Gegege No Kitaro of the bottle as Sakiaminato is where the author of Gegege No Kitaro is from. Nice review and I just picked up a bottle of the Dassai 39 to give it a try tonight.

I tried the 45 at Osen Izakaya in Los Angeles about a week ago, absolutely divine finished an entire bottle not sure if it was 720ml or 1800ml, now I’m invested into trying this again haha. Great video by the way, very nice how this was available to me right on time. New subscriber. 😊
Thank you very much! Another sake i suggest is Hakkaisan's Tokubetsu junmai. It comes in a deep blue bottle. You can probably find this at the Little Tokyo grocery store.
These ones in particular, and many sake sold internationally, are not fizzy. There are a few that are slightly fizzy and there are some that are straight up sparkling and bubbly.
As you said, you're not one of those snobs that say they can taste the soil of Okinawa. Concise and down-to-earth review!
