I've never seen Ethiopian food eaten this way... love you for trying to understand the culture. Fyi... the yellow cabbage with the potatoes is Tikel gomen. The chickpea paste-like thing is shiro wat. The spicy stew with the egg is doro wat. The one yellow curry-thing is ater kik and the other one is difin misir. You already got the collard greens we call yehabesha gomen. Zilzil tibs and doro wat are the only non vegan dishes you had. And the injera is supposed to soak up everything... that's the best bit. Hope this cleared up some of your questions.
There is only one restaurant in the Philippines called "Ziggurat cuisine" and I ordered Ethiopian Beef We't and Kitfo. There is an injera bread and tastes soft, sweet, spongy, semi-hard elastic hotcake-like taste thin bread which is not available locally.

Shiro is chick peas' powder made into stew. Tekil Gomen is cabbage and some potatoes cooked with onions, jalapeno.... Mesir is lentil stew but it can be yellow(with a spice called erd) or red(orangish, with berebere).
It is very interesting to eat Ethiopian food, especially DORO WET and shero wet Ethiopian food is the only unique delicacy you will not find anywhere else You ate only a few. There are over 328 different foods in the country. I ate 300 different foods.
Pan-fried liver with oven kept in oven aftrr cooking - spinach and cabbage : steamed - cauliflower and potato mash - spring onion and courgette roasted - thinly rolled suet and dough mix pan fried oven baked Try that as an anywhere meal set based on normal gardening

The best way to eat Ethiopian food is when you mix and match between the different samples a little bit of this a little bit of that rapped around an injera and a sprit or ginger ale sode at the end 🤤
Shiro is made from chickpeas. It's the smooth red sauce you said had a kick to it. Miser is lentil stew. I don't think I saw it on your plate. Tikel Gomen is the yellow cabbage on your plate. And the "kale" IS collard greens, not kale. Also, I love the way you ate and the fact you were researched on how to eat it. much love

The yellow lentils are Alicha Kiik, and I think they gave you two servings of that instead of Misir Wot (Lentils with red berbere). Either that or they didn’t give you Shiro (ground chickpeas). Traditionally, Doro Wat was like a king. It was eaten only on special holidays ( Easter, Enkutatash, . . . ) and it was eaten alone (not together with other foods, only with cheese sometimes). I prefer the traditional way.
