I have only made 1 comment and that was on Nan Simonsons podcast so I usually don’t comment but I was so excited when I came across . I immediately made it and I was so pleased with it . I’m going to eat it as it is but my imagination is getting carried away thinking about using this as a base for other soups like adding nutritional yeast and broccoli for a cream of cheese and broccoli soup as well as many others .Thank you I love this .
I also bought your new book .

    • @shaunrietdijk9220

It looks like AJ used approx.
1 kg - 2.2 pound of potatoes (based on the weight on the bag of potatoes she used which I dont believe was a full bag)
Equal quantity of zucchini as per recipe so 1 kg - 2.2 pounds
When she had finished cooking and open the IP you could see the water almost came to the max fill line of the 3 quart IP so based on the rough water displacement amount I would say
1 litre of water - 1 quart - 4 cups depending on what measurement systems you like to use.
You could always just put in the minimum amount of water to cook required by the 3 quart IP which I think is 1 cup and then add boiling water from a kettle once you start blending to get the desired consistency.

Without salt, it's not good, it's bland. I've been making potato-zucchini soup for years. I use broth, cook on stove, and mash with potato masher. It's easier than fooling with that Instant Pot. I sometimes add herbs or something spicy and salt as needed, depending on the broth.
