I made this delicious soup but first sautéed a half an onion and water and a couple of garlic cloves and at the end of squeeze of lemon and I’m sure it was just delicious without that but I really enjoyed it this way as well. Thank you for sharing.

It looks like AJ used approx. 1 kg - 2.2 pound of potatoes (based on the weight on the bag of potatoes she used which I dont believe was a full bag) Equal quantity of zucchini as per recipe so 1 kg - 2.2 pounds When she had finished cooking and open the IP you could see the water almost came to the max fill line of the 3 quart IP so based on the rough water displacement amount I would say 1 litre of water - 1 quart - 4 cups depending on what measurement systems you like to use. You could always just put in the minimum amount of water to cook required by the 3 quart IP which I think is 1 cup and then add boiling water from a kettle once you start blending to get the desired consistency.

I made a new discovery bcs I set my new instant pot incorrectly and a lot if the water evaporated. But I ended up with the BEST mash potatoes! The zucchini made them taste buttery. I love good mistake!

Without salt, it's not good, it's bland. I've been making potato-zucchini soup for years. I use broth, cook on stove, and mash with potato masher. It's easier than fooling with that Instant Pot. I sometimes add herbs or something spicy and salt as needed, depending on the broth.
