    Inspired by you I bought a stand mixer. Kitchenaid was too expensive for me so I bought "Howork" one and till now does a good job. I do not use oil or salt and I have mastered making a dough in now only 2.5 minutes (start to finish). I put approximately half of the water right away in the beginning and rest of it slightly slowly in about 1.5 minute period. Last 30 seconds I use use a tablespoon or two to slide the water from the side.

      I got this from Costco many years back. I believe it's the 6 quart bowl lift one.

    I had bought Chakki Atta in hope of getting more nutriition. I also want to use 3 cups of flour at a time. Would the measurement be the same as yours?

    Hi, is the dough of same quality if you use only one cup.

      Yes, you can use one cup flour too, and adjust salt, water and oil accordingly, especially if you have a smaller size stand mixer. But I prefer to use 3 cups of flour at a time in my 6 quart kitchen aid.

      Hi, the cost varies based on where you get it. I got it from Costco at the Thanksgiving deal price back then, which was $100 off the regular price.

      I prefer to have the dough rest for 15-20 minutes before making chapatis.

    how much is the maximum dough that you can knead at a time ? We eat roti's three times a day so three cups may not be sufficient for us .

      Maximum will depend on the size of the bowl. Larger bowls can do 6 cups easily.

    Sincerely appreciate your efforts to give the exact measurements, but in the case of flour and other powdery ingredients, it is more accurate to measure in weight rather than cups. The quantity of flour in a cup can vary by 15% to 25% depending on the scooping action of each person.

      Yeah, good point. Will keep that in mind going forward, and try to give measurements in both cups & grams for reference.

      @@TheLoveOfSpice Thank you for caring. I pick up many recipes from instinctive cooks who don't measure stuff and can't say how much they are adding of anything.
      My simple trick is to measure the container before they reach for it, and again after, and by simple subtraction I know just how much it was 😊
