I wonder if you did choose a different colour for the bobbin, perhaps it would end up similar to variegated thread?

No, I don’t think so. The top thread usually pulls to the back with embroidery so you would see a sort of mixture of threads on the back but your needle thread on the top. I suppose it depends what result you want. You could May like the result, I prefer using the same thread in needle and bobbin.
