Tom Bombadil is often viewed as an aspect of chaos that is more powerful than the "evil" Maiar or even Ainur (in other words he is a god), in that chaos as viewed through the optic of raw nature follows a path beyond the realm of mortals and immortals - thus he can hold the One Ring and be unaffected by its malignant force.
My theory: From the Ainulindale, Tom Bombadil is Ea, the World That Is. Ea is the Music of the Ainur to which Eru gave being. Thus, Tom's love for singing. From the Ainulindale and the Valaquenta: Eru sent the Flame Imperishable or the Secret Fire to dwell in the heart of Ea. Tom's great power is because, as the spirit of Ea, he has unlimited access to the Flame, which is Eru's creative power. My Tom Bombadil is Brian Blessed. But my other choices are Sir Derek Jacobi and Brian Cox. Rory Kinnear is a terrific actor and his take on TB is good but I still think he's TOO YOUNG for the part.

Tolkien's TB is old, merry, jolly, has a genuine beard, lives in a forest near the land of hobbits. RoP's "TB" looks young, is soft-spoken, very serious, has a fake beard, and lives in a desert in Rhun to the far east.
Mr. Bombadil is I'm sorry really NOT that intriguing a character. Because the reader is never told who or what he is every person has a guess. Who cares. How do you know or interpret him as immortal? Literally speaking we don't know. Tom more closely represents a character that is Tolkien's comment on his world and to some extent it is Tolkien putting himself into his own story.

Yes it I believe came out in the 1980s was a collection of stories and poems that centered around Tom Bombadil.@@JohnBricksmith2048
