Even though it isn’t canon, the show clearly elaborates on why they betrayed Adar. Orcs are simple minded, Sauron gain dominion over their weak minds. They were already weary to continue going to war when they felt they had completed their mission. Granted, this is not how orcs actually operate. They are a force of war, destruction, and blood lust. As Morgoth intended them to be. The show definitely bastardized much of Tolkien’s lore, but they do get some stuff right. Like the fact that orcs do procreate the way men, elves and dwarves do. They just don’t have loving families and desires for peace. Some orcs that made the tunnels in the Misty Mountains their home after Morgoth was defeated sort of wandered hopelessly while also having a sense of self preservation.
