My wife can’t take the heat, I made this with a mild Anaheim pepper, she loved it, as do our grandkids! A little different flavor, it’s better with Serranos. Also makes a good base for chili verde with pork!

You know the Tomatillos used to intimidate me and I never used them because they scared me but now I'll give them a try cause I love this salsa but I always buy it because like I said I was scared of them!
That's funny. But I know what you mean. When you have green chile growing up, why would you ever need to make a salsa with tomatillos? I didn't learn to make this until way later in life. And even though it's delicious, I'd still rather have green chile.

Looks really good! And can be used with so many dishes. How do you know when the tomatillos are ripe?
You can tell if a tomatillo is ripe when the husk is more tan than green, and it becomes loose and easy to peel.
