    Ingredients:
    For the Fried Chicken:
    * 8 pieces of chicken (drumsticks, thighs, wings)
    * all-purpose flour
    * corn flour
    * salt
    * black pepper
    * Curry powder
    * chili flakes
    * Cajun seasoning
    * onion powder
    * Oil for frying
    For the French fries :
    * 4 large russet potatoes
    * Vegetable oil (for frying)
    * Salt (to taste)
    For the Sauce:
    * 1/2 cup mayonnaise
    * 2 tablespoons mustard
    * 2 tablespoons minced pickles
    * 2 tablespoon Thai chili sauce
    * 1-2 cloves garlic, minced
    Instructions:
    1. Prepare the Chicken:
    * Mix the Dry Ingredients: In a large bowl, combine the all-purpose flour, corn flour and in the another bowl mix combine salt, black pepper, chili flakes,curry powder, Cajun seasoning, and onion powder.
    * Coat the Chicken: Pat the chicken pieces dry with paper towels. Season generously and Dredge each piece in the flour mixture, ensuring they are well-coated. Shake off any excess flour.
    2. Fry the Chicken:
    * Heat the Oil: In a deep frying pan or skillet, heat oil to 350°F (175°C). There should be enough oil to cover the chicken pieces halfway.
    * Fry the Chicken: Carefully add the chicken pieces to the hot oil, a few at a time to avoid overcrowding. Fry until golden brown and cooked through, about 10-15 minutes depending on chicken pieces size , turning occasionally to ensure even cooking.
    * Drain the Chicken: Remove the chicken pieces from the oil and place them on a wire rack or paper towels to drain any excess oil.
    3. Make the Sauce:
    * Combine Ingredients: In a small bowl, mix together the mayonnaise, mustard, minced pickles, Thai chili sauce, and minced garlic until well combined.
    4. Prepare the Potatoes:
    * Peel and Cut: Peel the potatoes (optional) and cut them into evenly sized sticks, about 1/4 to 1/2 inch thick.
    * Soak the Potatoes: Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps achieve a crispy texture.
    Preheat the Oil:
    * Heat Oil: In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 375°F (190°C). Ensure there is enough oil to fully submerge the potatoes but do not fill the pot more than halfway to avoid overflow.
    * Increase Oil Temperature: Raise the oil temperature to 375°F (190°C).
    * Fry Again: Fry the potatoes in batches until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined tray to drain excess oil.
    5. Season and Serve:
    * Season: Immediately sprinkle the hot fries with salt.
    * Serve: Serve the fries hot with your favorite dipping sauces.
    Tips:
    * Double Frying: The key to crispy fries is the double frying method. The first fry cooks the potatoes through, and the second fry crisps them up.
    * Uniform Size: Cutting the potatoes into uniform sizes ensures even cooking.
    * Oil Temperature: Use a thermometer to maintain the correct oil temperature during frying.
    * For Extra Crispiness: Let the coated chicken pieces rest for 10-15 minutes before frying.
    * Adjusting Spice Levels: Modify the amount of chili flakes and Thai chili sauce to suit your spice preference.
    * Alternative Coating: For a crunchier texture, add some crushed cornflakes or breadcrumbs to the flour mixture.
    Enjoy your homemade fried chicken and crispy French fried with a tangy flavorful sauce!
