    you will need...
    6 tablespoons biscoff (90mls)
    spiced sponge:
    65g soft butter (65mls / ¼ cup)
    65g brown sugar (70mls / ⅓ cup)
    65g self raising flour (120mls / ½ cup)
    1 egg
    ½ teaspoon cinnamon powder (2.5mls)
    white chocolate mousse:
    250mls double cream (1 cup)
    150g white chocolate
    ½ teaspoon vanilla bean paste
    whipped vanilla cream:
    125mls double cream (½ cup)
    1 tablespoon sugar (15mls)
    1 teaspoon vanilla extract (5mls)
    ganache:
    125mls double cream (½ cup)
    100g dark chocolate
    glass bauble:
    200g isomalt
    80g water (80mls / ⅓ cup)
    extras:
    6 teaspoon desiccated coconut (30mls)
    silver balls
    50g white chocolate (for piping out the deer and trees)
    70g white chocolate (for hanger & collar)

    How long in advance can these be made or would it have to be made on the day?

      Hi Martie.
      Thanks for watching, and I'm glad you liked it.
      It depends on the humidity in your home, the higher it is, the shorter it lasts. I make them in the morning that I need it and keep them on a very light oiled baking paper in an airtight container... Not touching each other (as they may stick together)
      You can make the mousse components many days in advance, keeping them in the freezer until you need them (which is great when you have alot to do)

    Those reindeer are so intricate and watching you pipe them was magical. Also, at 8:05, it looks like a giant Malteser that's had a bit taken out of it! :)

      Haha, it kinda does look like a malteaser!
      So, I had a Fin carre (whole nut) chocolate from lidl- it was on special for 70 something p. For a 200g slab. I'm conflicted- not sure if it actually tastes nice or if I it's great for the price?

      70p is a good price and I find Fin carre chocolate to be just fine :)

    Do you searve it straight out of the freezer, or let it defrost first

      Let it defrost a bit...
      After you dip the half in chocolate ganache, you can leave them in the refrigerator until needed.

      I would keep them in an airtight container on very lightly oiled baking paper.
      It depends on the humidity in your home. I make the mousse bit the night before and the sugar domes the morning of the dinner party.
