I love carne guisada. I make mine most of the time with pork meat, but I love a darker looking gravy then what I've see here. Also I never have put celery in to mine. An older Mexican women taught me how to cook it. All the recipe I seen on here, all had a lighter color of gravy. I prefer I nice browner looking gravy. My husband and I found a place in Lubbock who had the best carne guisana. The place looked quite run down, but when ever we went to Lubbock, that's were we ate. The had the best Mexican food we ever had, and we ate in many different kind of Mexican restaurants. To or great sadness the place got closed down. The owner was selling drugs out of his restaurant. His place was always packed with customers. Well, maybe that is why his place was always packed, lol.
Hello Gigi yes a lot use celery some don’t even notice it’s in the guisada lol but a lot don’t use it I think it adds more flavor myself..and most of the run down restaurants are usually the good ones in my opinion that’s definitely something I’ve experienced always so delicious and never duplicated..you have a blessed day and Merry Christmas and thanks for stopping in I truly appreciate it❤️

Lard is animal fat (pork) vegetable shortening can be substituted but the pork fat lends more flavor hope this helps❤️
