As a Japanese guy who's lived abroad, I know finding authentic ramen outside of Japan can be difficult or expensive. In this article, I will teach you how to use regular, run-of-the-mill dry spaghetti to create delicious, chewy ramen-style noodles using just 3 accessible ingredients!
INGREDIENTS:
- 160 g dry spaghetti - 1.0-1.8mm depending on your preference

I had the same issues in the USA. Frustrated trying to make them at home. One day I said to myself, I'm going to cook spaghetti and put baking soda in the water, thinking that baking soda Is an alkaline. Worst case, I would just ruin a pot of spaghetti. It worked out perfectly! Now I just use my pasta machine to make egg noodles. Which come out great too.
That's great! Not many people realise that the taste comes from the alkaline, it's great that you figured it out!
Of course fresh handmade noodles are the best, but it's good to have a short cut when you don't have time!

What happens if you add more noodles than than the amount you've listed? I feel bad about using so much water for so little noodles so I wondered if it's okay to cook more in it lol
Thanks for your question! Generally it's better to cook pasta in more water so that it doesn't stick together, but this is just a guide. You can increase the pasta up to 220g. Hope this helps!

to avoid sticking together after: Ice water bath or rinse, then drizzle some sesame oil to keep them from sticking.
Great tips! I use the sesame oil one often when I make abura soba or tsukemen.

I was wondering, is it possible to do this with gluten-free spaghetti? I looooove ramen, but like many other recipes, I can't eat it because it contains gluten!
At 4:01 you mentioned that it has to do with gluten, obviously the gluten-free spaghetti doesn't contain gluten, so I was wondering if the recipe would still be possible without the gluten!

Sorry to hear about your gluten intolerance. Like you said, if there's no gluten I'm not sure how the baking soda would react. I have a feeling it wouldn't work, or at least it wouldn't produce the same result. Sorry I couldn't be of any more help :(

can you dehydrate these for camping? Will they rehydrate properly?
If you want to try this technique when camping, simply bring dry pasta, salt and baking soda with you. No need to cook it in advance. Hope that helps!
@@SudachiRecipes No it doesn't. I kayak camp and want to just add-boiling-water and eat. Having to actually cook the pasta is time consuming and a waste of resources which is why we take raman. You boil, quickly, only the amount needed, add to the bowl and eat. Having to cook the pasta means carrying more water at 8.5#/gallon, watching the stove for the 15-30 minutes it takes to cook the pasta and so on.
We are looking for easy, fast, filling.
I made pasta according to your directions, dehydrated it, rehydrated with boiled water and it failed to rehydrate properly. I will try tossing the pasta into the pot as i boil the 1/2 cup needed and see what happens.
@@richardjohnson4052 Sorry I couldn't help... your question is very specific and I haven't tried dehydrating foods myself. If you're looking for something that requires minimal resources then I think buying instant ramen is better. This is purely a hack for making ramen style noodles from spaghetti, it's not a trick for making instant ramen.

What does the baking soda do to the water and/or noodles?
Thanks for your question! When ramen noodles are made from scratch, they are cooked in something called "lye water" which is an alkaline that adds colour and texture to the noodles. By adding baking soda, the water becomes alkaline and reacts with the gluten and starch in the spaghetti which makes them taste and look more like ramen noodles. Hope it helps!

@@xclream Hmm all I can suggest is either try changing brands of baking soda or try rinsing the pasta after cooking. You can also reduce the amount of baking soda up to half. Hope it helps!

Why baking soda?
Adding baking soda makes the PH of the water become more alkaline and that reacts with the gluten and starch in the spaghetti which makes them taste and look more like ramen noodles. It's pretty scientific, but I hope that makes sense!

Instant ramen yeah, but it's pretty different if you want to make proper ramen.
