Self build reconstruction of an old food stall YATAI in Fukuoka.

  • こんにちは。屋台けいじ大将のあべです。
    1991年から屋台けいじとして30年、先代から数えて60年近く福岡の街を見守って来た屋台は老朽化に伴い、2023年1月5日に解体しました。地域の皆様に愛され守って頂き今日に至ったので、解体作業は再建への希望と夢に心躍る反面、寂しさもありました。そしてこの度、自らの手で屋台を再建築する機会ができましたので、その作業風景を記録としてここに残します。現在福岡の屋台は行政の管理下にあり「屋台基本条例」の元で営業しております。その為、屋台の建て替えに際し、道路使用許可申請、食品衛生法、営業許可申請、屋台の規格確認などの手順を踏む必要があります。今回の動画は2023年1月から2月中ばにかけての作業記録ですが、年始は雨続きだった事もあり、主な手加工は普段仕込みをしているキッチンを片付けての作業になり、想定より営業再開が遅くなってしまいました。また、前職の関係からご縁があり、三重県の伊勢神宮から式年遷宮の御用材を頂きましたので、一部使用させていただきました。貴重なご縁に心より感謝致します。今回の撮影も「食えもん」さん(​⁠ @Japanesefoodcraftsman )に全面協力頂き、記録として残す事ができました。解体、制作に伴い迷惑を掛けた近隣住人の方、撮影に協力頂いた食えもんさんに改めて感謝します。これからも屋台けいじは、地域に根差し、コミュニティーの場としてより良い空間作りを目指して行きますので今後ともよろしくお願いします。

    Hello. I am Abe, the owner of YATAIKEIJI.
    The stall that has watched over the city of Fukuoka for 30 years since 1991 as YATAIKEIJI, and for nearly 60 years counting from its predecessor, will be dismantled on January 5, 2023 due to its aging. The dismantling of the stall, which had been loved and protected by the local community, was an exciting time of hope and dreams for its reconstruction, but also a sad time for us. Now that I have had the opportunity to rebuild the yatai with my own hands, I would like to leave a record of this work here. Currently, yatai stalls in Fukuoka are under the control of the government and operate under the "basic yatai ordinance. Therefore, when rebuilding a yatai, it is necessary to follow procedures such as applying for a road use permit, the Food Sanitation Law, a business license, and confirming the standards of the yatai. This video is a record of our work from January to mid-February 2023. Because of the continuous rain at the beginning of the year, the main manual processing was done by clearing out the kitchen where we usually prepare the food, and the reopening of business was later than expected. We were also able to use some of the wood from the Ise Jingu Shrine in Mie Prefecture, which was given to us for the ceremonial relocation of the shrine. We sincerely appreciate this precious opportunity. Thanks to the full cooperation of @Japanesefoodcraftsman, we were able to record and preserve the photos of this project. We would like to thank the residents of the neighborhood who were inconvenienced by the dismantling and production, and Shokumemon for their cooperation in filming the event. YATAIKEIJI will continue to root itself in the community and aim to create a better space as a place for the community.
