  • Hey everyone! Welcome back to the homestead. Today, I’m sharing my go-to method for making pickled veggies using a super versatile brine that’s perfect for all kinds of vegetables! 🥒🧅🌶️ Whether it’s cucumbers, red onions, or jalapeños, this simple brine recipe works beautifully for everything and is much cleaner and healthier than store-bought versions.
In this video, I’ve doubled the recipe to make sure I have enough for multiple jars of veggies. The doubled brine recipe includes 2 cups of vinegar, 2 cups of water, 4 tablespoons of sugar, and 2 tablespoons of salt. After making the brine, I chop the veggies and pack them into jars.
For the cucumbers, I use our homemade pickling spice, and for the red onions and jalapeños, I keep it simple with just peppercorns. After packing the jars, I fill each one with the brine, put on the lids, and give them a good shake to distribute the spices. It’s quick, easy, and incredibly versatile-this brine can be used with a wide variety of veggies.
I love how much healthier these homemade pickles are compared to store-bought. They’re free from unnecessary additives and preservatives, and the taste is so much fresher. Plus, these pickled veggies last for weeks in the fridge, making them perfect for snacking, adding to salads, or serving with meals.
For those looking for the basic recipe, here it is:
    Normal Recipe:
    1 cup vinegar
    1 cup water
    2 tablespoons sugar
    1 tablespoon salt
This brine is perfect for smaller batches, and you can easily double or triple it, depending on how much you want to pickle. It’s incredibly flexible, and you can adjust the flavors to your liking!
If you’re new to pickling or looking for a quick, versatile recipe to try, this is a great place to start. Don’t forget to like, comment, and subscribe for more homestead recipes, DIY projects, and tips on living sustainably in the Colorado mountains!
