      푸디파파 Foodiepapa 글루텐 형성을 막기 위해 반죽에 얼음을 이용하는 경우가 있는데 (전 반죽이나 튀김 반죽에 얼음을 넣는 이유) 그런 목적이 아닐까 싶네요. 이스트가 들어간진 모르겠지만 낮은 온도에서는 휴먼상태라 발효가 이루어지지 않으니 부풀리지도 않고 탄력성도 덜해서 더 바삭하니까 얼음을 넣어 반죽하시는 것 같아용

      zyking ssi i think it’s to keep the dough cool so that when they add the butter, it won’t melt into the dough so that it can create layers :)

    Where did the filling come from? They didnt show when did that. Ha?

      They do, but it's not obvious. Around 1:24 she's putting what looks like cream cheese slices on the dough. After all the folding and compression, you end up with a thin layer of filling in the middle of the dough from that.

      @@ManabiLT that's butter to make it flaky like croissant. And Im sure what Sylv Ichon mean is the filling that looks like a jam inside the doughnut
