    1/4 cup butter
    1/4 cup Erythritol
    2 tsp baking powder
    1 cup almond flour
    1 tsp vanilla
    20 drops stevia
    2 eggs
    2 tbsp almond milk

    Made these this morning and OMG they turned out sooo good. I added some lemon zest to the muffin batter and also squeezed the juice of 1/2 lemon into the batter as well.
    They took 22 minutes to cook.
    Oh and I made a glaze using 2 tablespoons of powdered Swerve and a little lemon juice. ( that was just enough for 1 muffin) Drizzled it on top. Omg it was like a lemon blueberry cake. It was bomb!!!!

    Tips: Use a little bit of flour on your blueberries before adding them to your muffin mixture. It will help the blueberries not to sink. Your batter should rest for 30 minutes in the fridge. Also, have oven at 400 for the first 5 minutes, and decrease for the remaining amount of time. It will help the muffins to rise up.

    If you coat you Blueberries in a small amount of flour before folding them in gently, the blueberries are less likely to sink to the bottom.

      If you add a tiny bt of your bulk sweetener to the blueberries, they will not sink!

      It's keto if you use the same alternative flour you are using in the recipe, in this case the almond flour.

      Pretty sure that a tsp of flour spread out across eight muffins won't be too detrimental to Keto.

    I love those muffins! Best ones yet.
    The only thing I’ve changed was instead of 2 eggs I did 1 egg, and instead of the 2nd egg I’ve added a table spoon of psyllium husk. I find that the flavour was so much better, tasted more like a real muffin. Worth trying.

      Psyllium husk doesn’t have a flavour, it only acts as a binder. When I used too many eggs, the muffins tasted too eggy. But with psyllium husk the eggy flavour was gone.

    Wonderful recipe, thank you! Tried it out 2 times already. I combined almond flour with coconut flour (half part), but it will need more liquid (8 tbs). Add 1 tsp xanthan gum for more fluffiness. Add 1 drop of stevia into blueberries before adding it to the mix, it will elevate the sweetness. Temperature is 200C (probs my small oven is not hot enough). Have fun trying it!

    I have 3 tips for you. Try it and thank me later. First, use a hand mixer and mix the batter for 5-7 minutes, then cover it and let sit for 30 minutes. Then throw in the blueberries, mix and bake. The blueberries will not sink to the bottom and your muffin will get a better rise and will have a nice chew to it. It won’t taste grainy as well. Also for baked goods. Try Purecane zero calorie sugar. It doesn’t have an aftertaste at all and the erythritol comes out in the urine while the sugarcane Reb M just passes through your system without your body storing it as fat. It doesn’t break a fast as well if you’re into fasting. Google it. Good luck and thanks for the recipe. We’re all learning from each other.

    This is the best keto muffin recipe that I’ve ever tried. I made a DOZEN muffins, 6 pecan and 6 blueberry muffins by doubling the recipe. 👌🏾They were sweet , moist and delicious. The perfect compliment with my morning cup of black coffee.❤️ I also loved the tip of adding drops of stevia to add sweetness and to avoid the digestive issues that often follow when too much erythritol is added. Thanks so much.

    I think this recipe would be 100x's better if you creamed the butter and eggs together. That whippy constancy would make them much fluffier!

      I whipped the xylitol and sugar together and got loads of volume but they collapsed 10 minutes into cooking. Don't think the almonds give much structure or as flour does.

    FABULOUS RECIPE!! I used the base recipe added to it melted Lilly's dark chocolate using double boiler, with a little butter and touch of cream then mixed into the batter it was amazing!!! Thanks guys! We have your cookbook and enjoy many of your delicious recipes weekly!

    Just FYI I followed this recipe, but made some tweaks for a different flavor. Instead of the almond milk I used plain yogurt. I used 1/2 the butter. I used a single applesauce (packaged cup). I added 1 small chopped apple. I added 1 tsp of cinnamon. I used 1/2 cup stevia/erithritol mixture. OMG fire 🔥🔥🔥

    Soooo I've always been team coconut flour and if it aint broke dont fix it. This was my 1st time using almond flour and it honestly gave me that "real cake texture". At a cost....tore my stomach up omg! But if u think about it almonds are really high in polyunsaturated fats and phytic acid. Almond flour is just like u eating about 100 nuts or so a serving (in most keto desserts) its too much for me personally but it was really good though. Stay well y'all.

      You can always sub coconut flour for almond flour but youll need to check how much to replace. Coconut flour is more absorbent and youll need less. I prefer coconut flour because I hate the overly almond taste

      you have to use almonds that have been roasted/toasted to make the flour, that eliminates the phytic acid issue and the enzymes that keep nuts from spoiling - that's what really causes most digestive issues with nuts and beans aside from actual allergies.

    Instead of erithrytol, which I didn't have, I used Swerve and instead of almond milk, I used coconut milk because that is all I had, and they turned out great! Got 5 stars from the wife, who usually doesn't like low carb foods. Great job!

    Okay so I’ve done a lot of keto recipes as far as cookies cakes brownies. They weren’t exactly my fav. But I made these muffins & wow. They were amazing. They were exactly like real muffins. Everyone I let try it fell in love with them.

    OMG!!!! Best Blueberry muffins recipe i ever tasted! way too much better than conventional muffins made using wheat flour! i had to drop the erythritol, can't find it where i live anyway, just used TRUVIA alone. switched up almond milk with coconut milk. turns out just INCREDIBLE! yum yum. thank you KETO CONNECT!

    If you want to keep the blueberries suspended in a batter you can coat them with some of the flour. Before going keto, I would coat them with wheat flour and I would think it would work the same with almond flour.

    If you toss the berries with a few Tbs gf flour mix or corn starch, then stir into the batter, your berries won't sink:-). For extra kid appeal, I make a butter crumb oat topping (grate 1/2 stick frozen unsalted butter into 1/3 c gf flour/almond flour mix 1tsp cinnamon, 1/4 c brown sugar substitute (I actually use ground palm sugar or sucanat, cus I bake for kids:-) plus 1/4 cup oats. Mix with your fingers and sprinkle on top before baking.

    These were absolutely great!!! I followed the recipe exact, I split the batter and made some with blueberry, and some with crushed a square of Ghirardelli Chocolate Intense 72% Cacao, which is about 5 grams of carbs. I made 4 muffins. There were delicious!!!! I will be making more, and the Erythritol on top was an great idea!! Thank you! Let me know if anyone has tried cranberries.

      I do only use the yolks btw...take out the whites so you don’t get that egg taste or feel!

      Thank you for knowing it's the whites and NOT the yolks that gives eggs it's strong taste. It's a pet peeve of mine when people suggest not using the yolks if it's "eggy".

    These are so delicious. I omitted the stevia and used heavy cream instead of milk. They are amazing. The perfect muffin texture. Not overly sweet. I topped them with butter. I doubled the recipe because i didn't want to run out and will probably use them as snacks.

    Sooo scrumptious! I just made my 3rd batch. The trick to keeping the blueberries from sinking to the bottom is to not mix them into the batter. Instead, pour the batter halfway into each muffin cup, add a few blueberries to each then top each cup off with the remaining batter. you can then add some more blueberries to the top if you want. Also, I now omit the salt since it seems to also enhance the flavor of the erythritol. Without the salt, you would think the muffins were made with real sugar (I used Swerve)

    My first time using a bunch of these ingredients for a recipe as I'm just getting more into keto. I was skeptical about the almond flour and the sugar alternatives, but these turned out amazing! Really moist and taste almost like the blueberry muffins my mom made while I was growing up. Definitely suggest trying this one out!

    to prevent sinking, add whatever youre using as flour directly on the berries seperately , giving them a light coat. then put them in the batter. Hopes this helps

    Second time making these! My family can't get enough. They are so delicious, quick, and easy to make. The second Time I made these I had to use frozen blueberries didn't have any fresh. Although they were pretty much thawed, I had to use them, the muffins came out super moist. Been following you two since I started this months ago. Love your channel and all your posts.

    I just made these yesterday. The kids loved them, I loved them, and the wife loved them. The batter is excellent and as you stated there is so much else I plan on using that base for. Excellent recipe. I used Monk Fruit as the sugar. Cant wait to make it again.

    Any recipe that starts with butter is going to be good. I love this, though, in all seriousness. The granular erythritol on top is perfect, really. That's what I expect from a blueberry muffin.

    I just made the recipe. It seemed dry so I added alittle more almond milk. You mentioned 22 to start checking. The muffin seemed like it wasn't done yet to I think all together I added 8 more minutes and they were delicious. I was confused why the sweeter then the stevia. I did what you said and even my junk food water husband liked them. Yummm

      Hi Veronika I'm personally thinking of some sort of a gelatin, agar agar collagen peptides and coconut milk to help give texture but I've never tried it myself. I personally don't like flan because of the weird texture but I love the flavor

    I made these but made them mini muffins OMG GOOD! I ALSO made the same batter and then added crushed pecans. Wonderful...

    I find that coconut flour tastes a lot better in sweets than almond. I did a similar recipe using coconut flour and it was great!

    Yum! Definitely making these for my son..and me of course! Curious if I could use the same muffin batter and put some sugar free chocolate chips instead of blueberries sometime to switch it up?!

    Since Megha is allergic to nuts (I am as well)... substituting sunflower seed flour or pumpkin seed flour instead of the almonds works really well!

    Just made these! So good! I do recommend letting them bake a few minutes longer than you initially think. The tops of mine are perfect, but the inside is slightly underdone.

    I just made these and they were very good. Easy to make and tasty. My only negative is the texture is a little grainier and they don't hold together as well as a wheat flour based muffin. But when you slam on some butter you can't tell the difference. :)

      Just an update on these. I put them in a plastic bag to save and they got better over the next two days. The texture improved and the taste was the same. These are one of the best KETO snacks you can make because the ingredients are easy, they are fast to make and they taste great.

    In traditional baking you can toss berries in corn starch before mixing them into the better to help prevent sinking..I wonder if there’s a keto friendly ingredient you could toss them in and achieve the same effect?

    Made these today. Blueberries sank to bottom but that didn’t bother me. They are amazing tho! Omg, sooo good! 25 minutes was perfect. I used a cupcake tin. Made 9 muffins.

    add in some lemon Zest to the batter! Then for dunking, make a mix of lemon juice with the granular Truvia...and dunk the tops of the muffins in that!

    Pumpkin spice with walnuts is a great idea. Plus you could probably make a buttercream icing with the Swerve icing sugar.
