    Ingredients
    2 cups all-purpose flour
    ½ teaspoon salt
    2 teaspoons baking powder
    1 cup white sugar + 2 teaspoons for topping
    2 eggs
    ½ cup milk
    ⅓ cup of vegetable oil
    2 cups of fresh blueberries
    1 teaspoon vanilla extract
    Directions
    Add flour, 1 cup of sugar, salt, and baking powder to a large bowl. Whisk it all together.
    In a separate bowl add oil, milk, eggs, and vanilla extract. Mix it with a fork until combined.
    Add your liquid mixture to your dry mixture and stir until combined.
    Coat your blueberries with flour, and fold them into your batter mixture.
    Line a muffin tin with cupcake liners and fill each liner with your muffin batter until almost full.
    Sprinkle your 2 teaspoons of sugar over the top of your muffins.
    Bake in a 375° oven for 25 minutes or until done. Insert toothpick into the center of the muffin and if it comes out clean your muffins are done.
    Remove muffins from tin and cool on a wire rack.
    Enjoy!!

    *Ingredients + instructions:*
    • Flour - 2 cups
    • Salt - 1/2 teaspoon (just a pinch)
    • White sugar - 1 cup
    • Baking powder - 2 teaspoons
    *Combine dry ingredients*
    *New Bowl*
    • Vegetable oil - 1/3 cup
    • Milk - 1/2 cup
    • 2 eggs
    • Vanilla extract - 1 teaspoon
    *Whisk wet ingredients*
    *New Bowl*
    • Blueberries - 2 cups
    • Some flour
    *Mix blueberries and flour, to avoid them sinking*
    *Pour wet ingredients into dry ingredients bowl and combine*
    *Add blueberries then pour batter into muffin cups*
    *Sprinkle some sugar onto the batter*
    *Put in 375°F (180°C) oven for 25 minutes*

    2 cup all-purpose flour=240 grams
    1 cup white sugar=200 grams
    0.5 cup milk=122.5 grams/118 millilitre
    0.333333… cup vegetable oil=64 grams
    2 cup blue berries=380 grams
    375 f=190 c

    I’ve done blueberry muffins 3 different ways this week. This by far tops them all! I’m sticking to this recipe forever😊I only included the lemon zest, light brown sugar (it was the only sugar I had) and used extra virgin olive oil instead (the one thats for baking Filippo Berio brand)

    Awesome recipe, I used frozen blueberries and these worked fine too (just washed & dried them first to avoid discolouring batter too much)

    I just made them & they came out so good 🔥🔥🔥 I added my own touch of a crumble topping with another easy recipe
    crumble topping:
    1/2 cup all-purpose flour
    1/3 cup granulated sugar
    3 tbsp brown sugar pinch lemon zest
    4 tbsp butter

    These where fantastic! One other thing I did was ad 1/2 cup mashed blueberrys and I also took them out 15 min into baking and sprinkled extra sugar then let them bake for 10 more minutes ❤

    I followed this recipe today but I used raspberries instead of blueberries.I can honestly say they have turn out great, there light and Fluffy and its definitely the best I've tried.

    I made these today, they came out very well. I usually dislike cooking/ baking but this recipe was extremely easy and understandable (even for beginners). Thank you for the clear presentation! I wonder if replacing the blueberries for chocolate chips would need readjusting certain ingredients (eg the sugar) or steps (eg coating the chocolate chips in flour).

      I made these with chocolate chips an still coated them in flour, it seems to stop them from sinking to the bottom of the batter. I adjusted the recipe by adding 1/4 tsp of baking powder and 1/4 less baking soda.

    You've definitely got me as a subscriber. I just did.
    I'm thinking that it would very easy to modify this recipe to almost any fruit. Larger fruit could be chopped up into blueberry sized chunks. Trying this recipe with chocolate chips and bits of strawberry could get really interesting & tasty. Oranges could be something of a challenge, but your flour trick would probably make it turn out alright.

      Yes you can, coat them in a little bit of flour and you may have to bake them for a few ( up to 5 ) minutes longer.

      Absolutely. Use the same amount of melted coconut oil in place of the vegetable oil. Texture will be very similar, flavor maybe slightly different.

      For Lemon Blueberry Muffins add 2 teaspoons of lemon zest to your sugar and mix until fragrant, add 2 tablespoons of lemon juice to your wet ingredients. Vanilla Extract is normally twice as strong as vanilla essence, so increase the amount of vanilla essence.

      Yes, canola oil is a type of vegetable oil so it's ok to substitute, but it may give them a slightly different taste and texture.

      Make sure baking powder is fresh, if you add baking soda it’s 1/4 teaspoon per 1 cup of flour.

      Yes you can, but we prefer vegetable oil because it’s mild flavor doesn’t compete with the main flavor of the muffin and vegetable oil makes your muffins more moist than butter does.

    Just made this today bc I was bored in the rainy weather.
    It was great, but here are a few tips:
    -Sift all the dry ingredients-- doing so helps prevent clumps
    -Use fresh blueberries rather than frozen, as frozen will slowly melt and darken the color of the batter (my mistake, but more of a visual difference than taste)
    -I didn't use a full cup of sugar, because that would mean a third of the batter would be sugar, making the muffins too sweet.
    -If you use regular-sized cupcake tins, this makes around 16-18 muffins
    -Every oven is different, and not everyone has a thermometer, so the toothpick tip is really helpful
    -Also I'm not sure why, but my batter was way less watery than it was in the video. I added a bit more oil and milk, but be careful with consistency and adjust accordingly :)

    I just made this recipe and it was delicious.. I chose it bc it used less oil and milk …
    This is what I did to take this recipe up a notch....
    * I browned the butter then cooled it before adding eggs to it ..
    * I added 1 lemon zest and half the juice of the lemon
    * I used heavy cream instead of milk
    * I curdled the cream with the 1/2 of the lemon juice ..
    * I added a pinch of cinnamon…
    They came out really good. Making burnt/brown butter instead of just oil really made them tasty .. the cream lightened texture up and the lemon zest made the blueberry flavor pop …

      Yes 12 muffins. You can store unused batter in the fridge for up to 48 hours or freeze for up to 3 months.

      No butter, using oil makes the muffins more moist, but if you prefer butter substitute 5 1/3 tablespoons for the 1/3 cup of oil, melt the butter and then let it cool for a bit before adding it.
