In Hawaii we eat a lot of those we call them “kawakawa” pronounced (kava kava). Any way we eat them sashimi or on the grill. I make it into sashimi and use sesame oil, soy sauce, and wasabi to make a dipping sauce. Try it or not, up to you.
It's not the same fish. They look a lot alike but not the same. What you call Kawakawa is the Mackerel Tuna or Euthynnus affinis which is considered good eating and is an indo-pacific species. These in the video are False Albacore or Euthynnus alletteratus and are an Atlantic species and are horrible to eat.
Great video. I lived in Nagshead for 10 years all through the 70's. It was a ghost town then. Never knew how good I had back then. Had the whole beach to myself most days. I notice all the houses are still built on stilts.
Lucky you had decent weather. The sound side of OBX is loaded with fish, the beach is either schools of fish or nothing like your pier experience. Glad you tried bonita for kicks cause that was on my to do list.
If you get a chance to still eat it Bleede it well ice it well and prep it well don't just throw salt and pepper on it and tell the World it's gross with this fish a lill bit of Lemon or Lime goes along way. find a good recipe and stick to it the meat is firm almost like a soft porkchop there is nothing wrong with it if cooked right good luck My Guy 🤘🏽 you'll Thank me Later
I must admit fishing is my love and I watch tons of fishing shows but you are by know means the most passionate about your fishing than anyone I have seen.On another note I was planning to try and book a surf fishing trip with you and then you quit guiding and that sucks I'm 70 and it was on my bucket list.

@@CarolinaGuy Unfortunately both Sam and his son Omie Tillett sold their restaurant about fifty or so years ago. At the time it was just a hole-in-the-wall shack of a restaurant. The food when they owned it catered more to the local fishing and charter boat crowd and I thought was better. It is still good; just not as good in my humble opinion. Sambo Tillett and his Omie were considered the godfathers of Oregon Inlet charter fishing and Omie was the impetus behind the Carolina Flare that most offshore and near-shore fishing boats in the area now sport. I surveyed Omie's boat several times for the company I worked for.
We chartered a boat out of Hatteras marina years ago to fish the gulf stream. Big blue. Conditions were tough. SW winds blowing for 5 days straight. Made for high seas. At the bottom of the trough, you saw walls of blue water. Caught one Mahi Mahi and one Bonito. Asked the first mate what to do with the Bonito. Said "boil it, and make Tuna fish." My first $1000 tuna fish sandwich. Definitely as good as canned... lol...
Great job! I love the outer banks. OBX is a tourist term, a dead give away. We were in Rodanthe the last of September. About two weeks early. We love the Navarre, Opal Beach area of Florida, too. Stay bummy!
I've been fishing OBX most of my life. Wait until you fish the Cape on the point. Different fishing technique all together. Huge Citation Reds this time of year. I love watching 1st timers to OBX hang into strong fish. Great video. You have a lovely family too.

I would love to see a pond or lake fishing adventure while ur here and would love to see you hook into a real large mouth bass and some drone footage of the beautiful woodland areas of this beautiful state! Growing up in SoCal, we would marinate Bonito, barracuda, or skipjack in Italian dressing overnight to get rid of some of the fishy taste. We also made sure to cut out the lateral line really well (which you did)...Italian dressing works great for any super fishy meat

Welcome to NC. Being in the western part, it's been a while since I've fished OBX, always loved Buxton (not far from Avon) Never got into the Bonita but goodness the Bluefish blitzes! Amazing to see other fish swim up onto the beach to get away from the "Choppers". Hope you get into some Blues and maybe a giant Red Drum (in NC) aka Spottail (in SC) and aka Redfish everywhere else! Oh and your favorite, which they call Sea Mullet on the OBX, known everywhere else as Whiting.
I love the OBX! It's so great to be able to drive up and down the beach and chase schools of fish. Yes it is combat fishing sometimes at the point, you never know what you might catch at the point though. A guy last year caught a bonefish on the south side of the point which is where it looked like you were fishing. It looks crazy but everybody works together there and it is just like you seen on the video. Thank you Beach bum for putting the spotlight on a quaint big fishing town. I'm sure Matt pool will love you and I love him I have a dagger and thank you for introducing me to him and I'm going to get up on me stick as well. Will you put in an order for a 7.5 foot breakdown rod as a bummy stick because I would love to have one, I have a brand new Penn SpinFisher 3500 that I need to put that on!

Don't give up on bonita just yet Matt....lol Try marinating it in italian dressing for a couple hours then put it on the grill.... believe it or not it's pretty dang good that way.

So which is better? Ladyfish, bonita, or lizardfish? I tried the Pacific version of bonita in Costa Rica and I think they're best used for bait. It's about like yellow tail jacks. But I have a recipe for mudfish that should work for bonitas. Preheat the oven to 500. Nail the fish to a board and cook it for at least a week. Then scrape off the fish and eat the board.
Y'all got onto a good, sustained feed and those are rare on the beach. Keep reeling if you feel the line go slack because they'll come straight at ya. Bonita make bluefish taste mild.

I live in Havelock NC it would be nice to meet you, you are NE of where I live I worked out of Atlantic Beach on the Capt Stacy headboat till 1998 I was disabled due to heart problems watching you has me wanting to star surf fishing which I have never done, I love the Outer banks. I had bonito grilled once it was soaked in buttermilk overnight first them marinated in Italian dressing and old bay for 4 hours then grilled it was good.
Matt, I recently caught and grilled some Bonita and it was great! I was very selective of the cut, opting for the less RED parts which didn't leave a lot of meat. I also ate it with fresh squeezed lemon juice. You should try again....

Man you remind me of me 30 years ago. And I have surf fished the East coast from Myrtle Beach to Daytona, never made the Outer Banks but they are still on my bucket list. You have a beautiful family, you should be very proud. Bonita fish I think is best used for bait or chum unless you are starving. :)
Well, you answered my question about the edibility of false albicore. I now know to stay away from them if I want some fish to eat. Tyler Hicks and Jordan Knigge catch real albicore off of Washington State, but you have to travel 30 to 70 miles of shore out into the Pacific to get them.
I was in Corolla back in May, and my kids and I tried our best to catch anything, but the surf was what I'd call rough. Not used to fishing "big" surf. My buddy whose from the east coast showed us up. He's used to fishing that and had the gear to do it. We even used his gear and could not hook anything, lol. It's all about what you're used to. However, OBX was beautiful, and I can't wait to go back. Hell of a road trip from Louisiana

the best way to eat bonito is very quickly over a hot fire. In japan bundles of straw are a common way to flash cook it. The oiliness of the fish is replaced by a smokiness. the inside should still be raw however just the outer 1/8" should be blackened by the smoke/ sear. use any type of soy dipping sauce with citrus
OBX is amazing isn't it? It's so far out into the Atlantic that the species you catch can be much different than the other beaches of NC. It's sort of like you're standing on a sand bar in the middle of the Ocean. I'm lucky to live in NC and get to go there occasionally. Beautiful quiet place.
you would not believe how jealous I am right now. I spend 4 weeks out of the year down there and to me it's not enough. I would love to move there but the wife says no. :( Good luck Matt, tight lines. If you get a chance to do to ramp 55 all the way at the end is shell heaven. Your little one could get bags of shells there. Also on ramp 55 is a wooden shipwreck in the dune line if it is visible right now. It changes all the time down there. Tight lines my friend. PS go to Dirty DIcks crab house in avon or Nags head, the fish sandwich is huge and great eating.
Great video Bama! I’ve seen some videos eating bonita raw and saying it tastes very similar to black fin tuna. I wonder if it’s all in how it’s handled.
Just the upper loins; 1 part soy, 1 part lime juice, 2 parts light beer. Marinate for 2-3 hours, grill super high heat..... tacos, top with fresh Vidalia, jalapenos, crema and cilantro. We eat a lot of em here in SOBX.

try baking the loins in a casserole dish with oil, water, and potatoes, with some garlic and lemon. soak 'em in milk for a half hour and rinse off prior to cooking if it seemed too fishy. recipe's somewhere on the web but it was pretty good.
Man I've said this a number of times, you are a lucky man. Awesome family and you get to fish consistently! On the fish, I've cooked these before. You need to bleed them immediately, gut the gills, slit in the tail and place head first in a bucket with water and ice. Once you fillet, blanch the fillets quickly in boiling water. Then cook like normal fish. Even then while ediable still only +average as fish go.

I'm pretty sure Brant ate Bonita awhile back and prepped it along the lines of sashimi or ahi and really enjoyed it. Maybe try the way he did it.

Don't eat the false albacore but the real Atlantic bonita is awesome. We get them here in NC in the spring.
I was in Corolla back in May, and my kids and I tried our best to catch anything, but the surf was what I'd call rough. Not used to fishing "big" surf. My buddy whose from the east coast showed us up. He's used to fishing that and had the gear to do it. We even used his gear and could not hook anything, lol. It's all about what you're used to. However, OBX was beautiful, and I can't wait to go back. Hell of a road trip from Louisiana

the best way to eat bonito is very quickly over a hot fire. In japan bundles of straw are a common way to flash cook it. The oiliness of the fish is replaced by a smokiness. the inside should still be raw however just the outer 1/8" should be blackened by the smoke/ sear. use any type of soy dipping sauce with citrus

OBX is amazing isn't it? It's so far out into the Atlantic that the species you catch can be much different than the other beaches of NC. It's sort of like you're standing on a sand bar in the middle of the Ocean. I'm lucky to live in NC and get to go there occasionally. Beautiful quiet place.
you would not believe how jealous I am right now. I spend 4 weeks out of the year down there and to me it's not enough. I would love to move there but the wife says no. :( Good luck Matt, tight lines. If you get a chance to do to ramp 55 all the way at the end is shell heaven. Your little one could get bags of shells there. Also on ramp 55 is a wooden shipwreck in the dune line if it is visible right now. It changes all the time down there. Tight lines my friend. PS go to Dirty DIcks crab house in avon or Nags head, the fish sandwich is huge and great eating.

Great video Bama! I’ve seen some videos eating bonita raw and saying it tastes very similar to black fin tuna. I wonder if it’s all in how it’s handled.
Just the upper loins; 1 part soy, 1 part lime juice, 2 parts light beer. Marinate for 2-3 hours, grill super high heat..... tacos, top with fresh Vidalia, jalapenos, crema and cilantro. We eat a lot of em here in SOBX.
You should try soaking in milk and cook all the way through. I did blue runner the same added some smokey flavor and made a dip.

try baking the loins in a casserole dish with oil, water, and potatoes, with some garlic and lemon. soak 'em in milk for a half hour and rinse off prior to cooking if it seemed too fishy. recipe's somewhere on the web but it was pretty good.

I have so many issues with line tangle and unwinding. What types of line do people feel are best?
Man I've said this a number of times, you are a lucky man. Awesome family and you get to fish consistently! On the fish, I've cooked these before. You need to bleed them immediately, gut the gills, slit in the tail and place head first in a bucket with water and ice. Once you fillet, blanch the fillets quickly in boiling water. Then cook like normal fish. Even then while ediable still only +average as fish go.
