    I made this tonight for my father. Usually he just eats whatever I place in front of him with no feedback. Tonight he told me that the dish was so good that if it was on a restaurant menu he would have bought it. I can't express enough what high praise that is.

    Oh, and for everyone asking about temp and time, I made a double batch, and put it in at 350 for 30min and it was perfect.

      Agreed. Made it with 2 lbs italian sausage, but did the rest per Sam. 20 min at 350. Otherwise your outsides will be too crunchy. Everything is almost completely cooked by the time it enters the oven. Noodles need a couple minutes and cheese needs to melt. That's it.

    🇨🇦🇨🇦🇨🇦 I watched this...sent the link to a few of my girl friends and got everyone on board and between 4 of us we made 37 pans of SAMs spicy baked ziti and had a delivery service that runs health care workers to and from the hospitals come by and they just picked them all up to bring up to some of our first responders, Hospital staff who are living on the hospital parking lots and local area because they can't go home while working in the hospital. Thank you Sam for the inspiration up here in Ontario CANADA! 😷😷🇨🇦🇨🇦🇨🇦🇨🇦🇨🇦🇨🇦🇨🇦🇨🇦😷😷

      I like to do mine in a big crockpot and portion & freeze.
      I get the best ricotta and pasta sauce, and budget buy everything else, and feel like a million bucks after just throwing everything in after cooking the meat.
      But I'll gladly help you with your ziti surplus ☺️

      I'm a frontline hospital worker in Australia. We have had a pizza delivery from Dominoes, which was lovely. After making this the other night, I'd have pushed everyone out of the way to get some if a kind local had made some and sent it in to us!
      What an awesome gesture. From a nurse in Australia, thank you for thinking of the frontline workers. It's the small gestures that make a huge difference.

      Justin Monnie I made 2 different sizes the regular lasagna pan sized one baked for 30-35 minutes, the smaller square cake pan size was 20-25 minutes 350 degrees... They freeze great whole or cut into serving sizes also....my sister in law works in the hospital she was my inspiration... And pasta is great to feed many people.

    My wife hasn't cooked in months since I discovered Sam the Cooking Guy! I get in from work now and ask my wife what she wants for dinner, then off to youtube I go to find STCG's recipe for whatever she wants! She's living in my world now! Thanks Sam!

    This looks great! The only thing that I do a little differently, is take a scoop of the sauce and mix it into the pasta before I layer it. Not a lot, just enough so that there is a thin coating of sauce between noodles, which keeps them from sticking together and drying out, and adds more flavor as it cooks into the noodles.

      That's what I do too. And I tend to use the ridged ziti as opposed to the smooth kind, just because of how the ridges hold the sauce.

    Hi Sam! Here in Malta (tiny island south of Italy) we make our traditional Timpana - very similar to your baked ziti with Italian sausage & ricotta but we enclose it in pie dough. I also like adding minced bacon, kunserva (concentrated tomato paste), red wine and bay leaves to the sauce.

    OMG! This changed my life! SO GOOD! We made this tonight. It was so good. The people saying this is dry need to check again. I am never going back to jarred spaghetti sauce or marinara, or whatever. Thanks Sam!! We have about 5 cans of those tomatoes in the pantry.

    I've baked this many times for my kids. The portion in this video can fit into a smaller baking pan (about 10" x 8" x 3") and toaster oven. If you have shredded mozzarellas cheese on top, oven temp is 350F for about 10 minutes to melt the cheese, and 425F for another 10 minutes to brown the cheese.

    Sam, you have got me through this whole having to be stuck in the house. My hubby had just bought me a knife like your knife, mine is westhoff. But I have been inspired to cook again. I am trying fire roasted tomatoes and peppers. Your videos always are the best. I have to get one of those and we mix shirts! Thank you for making things I thought I could never make but I have tried to add things to my recipes, but now has become Sam's touch! Love your sense of humor. Thank you! Love from Indiana.

    Sam made this tonight. Excellent! Frozen spinach is the secret ingredient. Added balsamic vinegar, sugar and some herbs to the sauce. All goof.

    This looked amazing. Instead of layering it like lasagna I would mix up the sauce with the ziti so every noodle has sauce. Then layer the ricotta and cheese. 🥰😍

      I’ve never made Ziti, mostly because every time I’ve seen it made it looked like quite the pain in the buns. But, my mom mixes the ricotta and some cream into the tomatoes then stirs in the pasta. Then the whole mess gets dump into the pan and baked off.
      You are right the sauce absolutely has to not only coat all of the noodles, but get inside them as well.

    Let me start by saying this might be considered sacrilegious, but I made the baked ziti but used a pound of a meat substitute (don't remember the brand) instead of the Italian sausage. I did it because my vegetarian son was coming over and I didn't want to create two different meals. Figured it would work though with a meat substitute. The problem though was that I wanted to capture the Italian flair of the sausage and the meat substitute we had didn't have any spices in it so we went on the internet to find a spice mix to add to the fake meat. We used (for a pound):
    1/8 teaspoon fennel seed,
    1/2 teaspoon salt,
    1/4 teaspoon garlic powder,
    1/4 teaspoon paprika,
    1/4 teaspoon black pepper,
    1/4 teaspoon crushed red pepper.
    1/2 teaspoon italian seasoning
    Verdict? It was actually really really good. Don't get me wrong, I absolutely love Italian Sausage but I have to admit that using the fake meat with the spice mix above was really good. The only thing I would recommend is to figure out how to add more moisture to this because you loose the sausage moisture. We think adding oil oil or more tomato mixture would do. Also, for left overs heated up in the oven I drizzled it with olive oil and it was amazingly good because the cheese got crispy and some of the noodles also got crispy. The texture was fun.

    i love cooking shows because they work up my appetite. I try to find good ones on you-tube, Its a combination of good looking food, and a good amount of time for the show so i can eat my meal and still have my appetite working without having to do a search for another cooking show. I suffer from (unintentional) anorexia in that i never have an appetite unless i dont eat for a period of time (then i pig out. never realized what anorexia really was until my appetite started suffering and did research.) This show is the perfect balance of entertainment and good food. Just wanted to thank you for that and let u know you are helping out people more than just showing us recipes. thanks! very entertaining, food always looks good. i think ill eat another burger soon! :D fav food cooking channel on youtube by far.

      There is no beshamella sous. He cooks with frozen spinach..... And puts it in the meat sous, that he cooks for so short and puts only sausage in. Also please don't use shredded cheese it cannot melt properly when cooking it...

      @@kevindougherty885 Frozen peas are preferable than fresh ones in a lot of recipes because you add them last and they don't get overcooked. He didn't keep the spinach frozen though so I have no idea why he's using frozen and then thawing it.

      @@kevindougherty885 I wondered that myself, but it occurred to me that maybe fresh spinach contains too much water. After cooking fresh spinach I find I have to drain a fair amount of water. I wouldn't know where to get the frozen stuff so I'd probably freeze some fresh and then use that.
      Of course, I could be totally wrong.

    Thanks for sharing Sam. I made this tonight for my family of four and we all loved it! I put a little too much red pepper in it and it made it a bit too spicy for a couple of us. Next time I will dial that back a bit. This made enough for two meals for four. So I am going to freeze the other half.

    I don't know if Sam ever reads these, but I want to put this here. Sam has given me ideas and hope that I can expand my nutrition plan. As I have watched his videos, I have taken some risks and made things then portioned them out and frozen most. Full disclosure, I have a medical condition and I made everything bland, now I am enjoying my kitchen again. I don't have all the cooking pizazz of Sam the Cooking Guru, but I try.
    I am still looking for healthier items in some things to substitute and can always use help or suggestions there so I may keep expanding the nutrition plan. I will admit, I bought his knife as I need a nice one. Again, THANK YOU SAM! A teacher

      Tamrae Uchrinscko everything is already cooked, so it’s really just long enough to warm things through and melt the cheese on top. I usually do mine at 350 degrees for about 20 minutes or so. Just until everything is bubbly and brown ♥️

      @@pinkLeopard580 I like to make a low-carb lasagna with lean ground beef, Italian sausage (all cooked beforehand), thin slices of zucchini, ricotta and mozzarella cheeses, and I put it in the oven on 350 for 40 minutes. But it's also in a larger 13x9 dish.

      No... your not the only one. I didn't hear either one of those important tidbits come out of Sam's mouth because he was too damn busy cussing while he cooked. But that's only ONE of the reasons why I love his channel so much.
      DON'T CHANGE A THING SAM.

      everything is fully cooked so all you are doing really is melting the cheese. Usually you put baked ziti in at 350 until the cheese on top starts to brown.

    I made this today and it was the bomb! Much easier than lasagna but generally the same effect. 35 minutes at 350 degrees did the trick. Adding olive oil and pepper to the ricotta was inspired. It gave a really great olive oil flavor.

      Try 30 minutes at 375. Everything is already cooked so you are just reheating to melt the cheese.

    Pasta was sticking because no oil was added to the water. Also it’s RiGOATta (how we pronounce it back home). While I add salt to the water, when sausage is the main meat, I use less salt in the water because the pork is pretty salty as well. As usual, looks good Sam!

    Sam!!! Please do a video on how to make CRISPY- restaurant style brussel sprouts that aren’t sad, limp, soft messes. One of the BEST dishes when done right and one of the most disappointing when trying to re-create at home. Much love to you and Max.

    Looks good, but…Rigatoni (bigger tubes to carry the sauce) with the sauce premixed into it before layering it into the baking dish and Boursin Fine Herb Cheese mixed with the ricotta adds a bit more “comfort” and flavor. Baked Ziti/Penne/Rigatoni is hard to beat and easy if the sauce is pre-made and frozen for later use. We make 18 qts of our favorite sauce and freeze it into tubs or freezer bags. Add plenty of sauce prior to baking so the pasta isn’t bare and hard during the baking process.
    Cento San Marzano peeled tomatoes are awesome. I agree…ALWAYS have a few cans in the pantry.

    Baked ziti is one of my all time favorites!!! My Grandmother made it and my mother made it ( even better than my Grandmother) but I never realized until watching Sam the Cooking Guy that this dish is essentially Italian nachos.
