The sand ginger powder pairs really well with chicken. You can also make a dip with it with the broth from poaching chicken or chicken stock and salt. Also you can add some scallion oil to it too.

鹽焗雞(上):
材料:
冰鮮雞1隻
鹽焗雞粉1包
處理:
1. 斬去雞腳。
2. 去除雞膏及雞肺。
3. 洗淨雞,擎乾水。
4. 鹽焗雞粉倒入大碗中。
5. 加入1茶匙玫瑰露酒。
6. 加入生抽2湯匙。
7. 攪勻。
8. 雞已擎乾水,再用廚紙索乾雞的內外。
9. 放雞入調味醬料中,內外搽勻
10. 醃2小時,最理想4小時。
Steam salted chicken (Part 1):
Ingredients:
Frozen Chicken 1 No.
Spicy bake mix 1 No.
Preparation:
1. Cut chicken feet.
2. Remove fat and lung of chicken.
3. Rinse chicken thoroughly and hang dry.
4. Put spicy bake mix into a big bowl.
5. Add 1 tsp rose liqueur.
6. Add 2 tbsp light soya sauce.
7. Mix well.
8. Chicken has already hung dry. Dry with kitchen towel afterwards.
9. Put chicken into seasonings. Mix well.
10. Season chicken for 2 hours, 4 hours will be better.
