When I was a child my grandmother made some of the best food. Two of my favorites were sock-it-to-me cake and her butter roll. I occasionally make one or the other just because I like them. I made the sock-it-to-me cake and my granddaughter came by to visit and she had a piece, then a second one and ended up taking most of it home. My grandson called and and asked why was I holding out on him, he cooks for his mom and siblings. He had never heard of my cake! And it was delish! Told both they were old recipes that I got from my Grandmother. The two of them got together and bought an empty book! And they are here several times a week cooking with me and writing down recipes I have in my head. We are enjoying all the wonderful recipes together and the two Grands are saving part of our family heritage from my Grandmother's kitchen and their Grandmother's kitchen for all the grands in the family. Simple recipe: 1 batch of biscuit dough, roll it out thinly like for cinnamon rolls. Cut it into about 6 inch squares. Put about one tablespoon butter in the center, add a couple tablespoons sugar on top. Roll it up like an apple dumpling. Get about one inch of water boiling in a cast iron skillet. Add a tablespoon of vanilla to the water. Place the dumplings in the water carefully. Simmer for a few minutes (15?) until the dough is cooked. Place the skillet in the broiler until the top if brown. Delicious. I had an aunt who added peach slices to the dumplings but I haven't tried it.
I completely understand your craving for sweet things. The older I got the more I wanted sugar sweetened goodies. I say I need the quick energy that I didn’t need in my younger years. That’s probably a fib I tell myself. But we deserve to indulge yourselves now. God bless you and yours.

This cake is a masterpiece. Thank you so much for sharing it. My grandmother was French and taught my mother who then taught me the French method for caramelizing a dice of raw apples without turning the apples to “mush” I would like to share back with you to return the favor. It’s kind of “fancy,” and a bit more trouble, but caramelizing the raw apple dice without cooking the dice down to a “mush” does elevate your otherwise miraculous recipe: -The method involves high heat and a flambé stage, so be brave and have everything ready to go before you start! -Place heavy well-seasoned cast iron or enameled cast iron 12 inch skillet over medium high heat and sprinkle entire surface with 2-3 tbsp sugar. -Watch sugar carefully and shake skillet occasionally to keep spreading out sugar over the surface of the skillet as the sugar melts and browns until the sugar is mostly caramelized to your desired amber color before burning. This is called a “dry caramel,” or “caramel à sec” in French -Immediately add apple dice-the liquid from the apples will cool the caramel and the apples will pick up the caramel-and raise the heat to high -Sauté a few minutes on high-the apples will continue to lose a bit of moisture and brown on the surface while remaining as a dice -Add 2 tbsp butter-once the butter is melted the apples should “fry” briefly -Turn off you overhead stove fan and gas flame if using, and pour in 1/8-1/4 cup apple brandy-Calvados or Apple Jack-and ignite -As flame dies down return skillet over high heat briefly until the apples begin to “fry” again and all the alcohol is gone -Scrape caramelized apple dice onto a plate to cool and steam off a bit -Use the caramelized apple dice in your cake recipe just as you suggest I also added 1/4-1/2 tsp of the following spices to the cake which is to my taste: ground cardamom, ground dried ginger, allspice and grated nutmeg. I'm soo happy Mr. Brown loves your cooking. It's so satisfying to have some one to please and share. Hope your kids and grand kids can come safely to share the love soon. Yes please do the oatmeal cake. I don't have smell or taste-a-vision but my imagination is better and bigger than my taste buds or nose. Tell Mr. Brown I'm driving the school bus again, slowly reincorporating from virtual ta face-2-face learning. I've been working in the elementary schools helping k-5 children of our school teachers and staff with the virtual learning. Boy was that a trip, and not always a good trip. After seeing what these kids are and aren't taught I'm so glad I was able to homeschool my daughter. She got a proper education including computers but a lot of hands on learning and a field trip every week. When my husband was working out of town we were able to go with him or at least visit him often. We visited museums, zoo's and amusement parks all over the southern states. Fieldtrip/Road trips. She, Mary, wants me to homeschool her kids when she has any. I don't see any grand children happening in the foreseeable future. But it's a nice thought. Love Ya both, Deb.

I grew up a country girl in a small Maine town, so many of your recipes bring back childhood memories, even though I haven't lived this culinary lifestyle in over 50 years. I recently discovered a renewed interest in preserving fresh produce, started canning and pickling again this summer like my mama and grannies, and so I began to rely on you for guidance, because you were like "comin' home." I haven't baked sweet stuff for decades, but...my word! This cake just may send me straight to the attic to take my old Kitchen Aid Mixer out of retirement! My goodness if you only knew I’ve been searching for this recipe for weeks. I was given this recipe 47 years ago….. misplaced it, and been searching online for some that resembled it. Nothing came close to what I remembered. I knew what the batter looked like and the hot glaze put on while cake was still hot. The name of the recipe she gave me was Dutch Apple Cake….. but your recipe looks spot on to what I recalled it looking like….. I remember when it cooled it was more dense due to apples and walnuts and the glaze soaking into cake. Thank you 🙏 for posting this ❤️❤️❤️

Meee toooo. I was just noticing that I've had more of a craving for sweets than food as I get older (60 now) . I've always been conscientious about how many sweets I eat even though I love them.
I was told our tastebuds decline as we age but the taste for sweet stays strong. Told this by a nursing home worker after witnessing a family member devour a milkshake (she’d never been much of a sweets eater).

Your story about your grandpa not wanting icing reminded me of my granny, she made cakes and cooked a vanilla nutmeg sauce on top of the stove and poured that on each individual serving of warm cake!

My Mom and I watch your videos and talk about the recipes. She sent me a text yesterday that I shouldn't make this cake because I'd want to eat the whole thing. Tell Mr. Brown I'm driving the school bus again, slowly reincorporating from virtual ta face-2-face learning. I've been working in the elementary schools helping k-5 children of our school teachers and staff with the virtual learning. Boy was that a trip, and not always a good trip. After seeing what these kids are and aren't taught I'm so glad I was able to homeschool my daughter. She got a proper education including computers but a lot of hands on learning and a field trip every week. When my husband was working out of town we were able to go with him or at least visit him often. We visited museums, zoo's and amusement parks all over the southern states. Fieldtrip/Road trips. She, Mary, wants me to homeschool her kids when she has any. I don't see any grand children happening in the foreseeable future. But it's a nice thought.

I grew up a country girl in a small Maine town, so many of your recipes bring back childhood memories, even though I haven't lived this culinary lifestyle in over 50 years. I recently discovered a renewed interest in preserving fresh produce, started canning and pickling again this summer like my mama and grannies, and so I began to rely on you for guidance, because you were like "comin' home." I haven't baked sweet stuff for decades, but...my word! This cake just may send me straight to the attic to take my old Kitchen Aid Mixer out of retirement! I guess the old saying is true: "You can take the girl out of the country, but you can't take the country out of the girl." I so enjoy you and Mr Brown and I'm so glad I found you. I’m like you. As the fall comes in, the baker in me comes out. Yumm-my!! I’ve always loved sweets and as i’ve gotten older, that hasn’t changed! I love to cook, but i really love to bake. I’ve search high and low for this recipe. I can’t tell you how many apple cakes I have made to find the best apple cake and always good but never “over the top”. My goodness if you only knew I’ve been searching for this recipe for weeks.
I was given this recipe 47 years ago….. misplaced it, and been searching online for some that resembled it.
Nothing came close to what I remembered. I knew what the batter looked like and the hot glaze put on while cake was still hot.
The name of the recipe she gave me was Dutch Apple Cake….. but your recipe looks spot on to what I recalled it looking like….. I remember when it cooled it was more dense due to apples and walnuts and the glaze soaking into cake.

Meee toooo. I was just noticing that I've had more of a craving for sweets than food as I get older (60 now) . I've always been conscientious about how many sweets I eat even though I love them.
I was told our tastebuds decline as we age but the taste for sweet stays strong. Told this by a nursing home worker after witnessing a family member devour a milkshake (she’d never been much of a sweets eater).
