Ms. Lori, I wanted to let you know that I made this Blue Ribbon Carrot Cake for our annual auction of baked goods at our church. I made 2 King Cakes and this, my King cakes sold for $47.00 and $75.00 BUT the carrot cake sold for $175.00! I still (I'm 74) remember our first school cook when I began teaching. She would often make the teachers special treats or dishes at lunch. We all loved her. There were other cooks through the years but I have forgotten their names even though they were nice, friendly people and I can picture them. But there is something special when you make or do something special for people. You will always remember. I love your videos. Thanks for making them "special" for us viewers. I watch them when I am a bit down and they are comforting.
YUM YUM YUM!!!! My husband works as a maintenance tech at a community college. Everyone used to pick on him because he brings in leftovers for dinner. Then one time he took in some leftovers to share. Now he has a couple ladies in the office and janitorial staff come in his office and ask so what did Rande make for dinner? They love when takes in some of the baked goods. One of his ladies saw he had a bowl of muffins and she stole them. Her mom is our son's special education teacher. Our soon to be 14 yr old is on the autism spectrum. I like keeping dry milk and dry buttermilk around for just in case.
@@siege919 No apparently a lot of them live close enough to go home, or they have a premade meal. Some eat out at local eateries near by. There is no cafeteria at this college.
I wish I had a Country Kitchen like you. Your home is so honey. I'm also watching my carbs so far I've lost 37 lbs in 3 months. My Dr said that's too much for that length of time, but I sure feel better. I will be making that Carrot Cake tomorrow through our snowstorm we are getting tonight. It looks delicious and easy. I only have to go get buttermilk, mine expired. I also wanted to tell you I started getting whole chickens and cutting them up since I watched your video on cutting them. Peggy Bouley Peggy you can make buttermilk by adding lemon juice or vinegar to regular milk. Mine always had expired when i need to use it too, so annoying 😏....i might order me some powered buttermilk 🙂
Hope Love Faith do you know if caned milk and lemon or vinegar makes adequate buttermilk? I’ve never tried. In the winter it’s so difficult to get to the store. Same in the heat of summer when it’s 101*.
Humm, driving ma to Physical Therapy, we're discussing our fav carrot cake, not wanting store bought. What the... They must be listening, as soon as home, there it is! She says it's a pain w/ layers. I don't like shredding carrots.. Tho looks like this will have up be "On the Menu" for her 86th Birthday next week, and just b4 she goes on vaca to Branson. Easy to see, you're such a blessing to so many. Anything from down on the farm that I miss daily is a breath of fresh air. TY for all you do!

I was on a low carb diet years ago and lost 82 ponds very quickly. But as soon as I started eating normally again, I gained it all back plus some. I know I should be on a healthier diet but I like to eat! Keep on making the food you do Miss Lori. It’s delicious!
Yum! I also use the Watkins. The clear vanilla from Watkins keeps my white cakes White. Had an uncle named Watkins called him Watso from Etown Ky. I guess grandparents bought into that company! Love this recipe making it right now!
I've never had a carrot cake with both the glaze and the cream cheese icing. I bet that would be good. Some in my family puts the glaze and some use only the icing. Thanks so much for posting. Cake looks great, am sure it was much enjoyed. Seeing the Watkins vanilla bottle brought back good memories. My Grandmother used Watkins products, had a really nice "doot-to-door" salesman... I nicknamed him "The Watkins Man". Yep, that's going back a good number of years... at least 40 LOL! I still have the (really) old vanilla bottle in her spice cupboard, along with several of her (now my) treasured measuring tools. The bottle is glass, imprinted with WATKINS and has a cork stopper. I've been making this exact cake for 30 + years, but I add 1 cup of raisins soaked in the pineapple juice, drain the juice before adding raisins. The cake tastes better the longer it sits. It also freezes well. I bake mines it in a metal pan. I line the pan with overhanging foil so I can lift it out of the pan with ease. It's the only carrot cake recipe you will ever use. I also learned the finer the carrots are grated the moister the cake.
Carrot cale is one of my favorites. Thismakes me miss my great aunt. She was always making cakes for me. Her best cakes were carrot n red velvet. My mom makes me a fantastic mandarin orange n pinapple with cool whip cake.

I found and used a cream cheese frosting on a carrot cake made with 8 oz. cream cheese and 1/4 cup of mild honey and some vanilla. It was good and everyone liked the combination.
My husband bakes a carrot cake each Christmas but didn't bake one last year. We may be having "Christmas in July" because now I'm craving carrot cake! (Mrs.Rugby)
I have made this same carrot cake so many times. It is absolutely my favorite. My family doesn’t want the glaze in it because they say it’s too sweet. But sometimes I make it with the glaze. I’m a sugar girl and love sweets. I like the walnuts on top of the cream cheese frosting instead of in the cake. I’m sure pecans would taste good too! This is my favorite cake! Love it! 🎉

I made this right along with you this morning, Ms. Lori. I did decide to leave off just the frosting though, since I prefer things not too sweet. Even without it, WOW, this cake is amazing! Next time I might add a big dollop of homemade whipped cream to each piece. I'm making a book of recipes for my 19 year old son who loves to cook and this is definitely going in it. I've been making this exact cake for 30 + years, but I add 1 cup of raisins soaked in the pineapple juice, drain the juice before adding raisins. The cake tastes better the longer it sits. It also freezes well. I bake mines it in a metal pan. I line the pan with overhanging foil so I can lift it out of the pan with ease. It's the only carrot cake recipe you will ever use. I also learned the finer the carrots are grated the moister the cake.
Carrot cale is one of my favorites. Thismakes me miss my great aunt. She was always making cakes for me. Her best cakes were carrot n red velvet. My mom makes me a fantastic mandarin orange n pinapple with cool whip cake.

I found and used a cream cheese frosting on a carrot cake made with 8 oz. cream cheese and 1/4 cup of mild honey and some vanilla. It was good and everyone liked the combination.

I have made this same carrot cake so many times. It is absolutely my favorite. My family doesn’t want the glaze in it because they say it’s too sweet. But sometimes I make it with the glaze. I’m a sugar girl and love sweets. I like the walnuts on top of the cream cheese frosting instead of in the cake. I’m sure pecans would taste good too! This is my favorite cake! Love it! 🎉

I made this right along with you this morning, Ms. Lori. I did decide to leave off just the frosting though, since I prefer things not too sweet. Even without it, WOW, this cake is amazing! Next time I might add a big dollop of homemade whipped cream to each piece. I'm making a book of recipes for my 19 year old son who loves to cook and this is definitely going in it. Thanks so much for all your videos. I watch a new one pretty much every day.
