- Pommes Anna
A classic French dish that dates back to the Napoleon times, supposedly named after an actress. Traditionally made with only butter and seasoning, I like to add a touch of thyme and a little grated Parmesan for that French Italian twist. Pommes Anna is essentially an upside down potato cake or more like a tart. So the bottom is actually the top. Therefore take extra care when arranging the first layer, as that’s the layer you’ll see on top.

I pulled this off once years ago and it was one of my greatest triumphs. Ever since then, it always ends in disaster usually involving potatoes sticking to the pan or even worse, spilling it all over the floor during the “flip”. The right pan is critical and that handle can’t get in the way during the inversion. You did a great job chef! Bravo.

Your take on thus recipe is a good one. I'm going to try it tomorrow. I have always found fresh dill to be a perfect accompaniment to potatoes so I am also going to test your idea with dill when I get a chance, Also Pecorino, the renowned Italian sheep' milk cheese would be an amazing choice in the recipe.

Pommes Anna is an old recipe that has fallen out of favor due to its complexity and time it takes to cook. Although Chef here has made it perfectly ! I am trying this tomorow...

Just use dry thyme or you could use rosemary.

Hey Joel, How goes it, this is like a pizza, I don't think I have ever had this, I know that I will be having some this week, I may grill some smoked ham slices, maybe a few anchovies, more Parmesan, & heat up some Marinara with Basil/Oregano, and coat the potatoes & meat as I snack on them.
