    That looks absolutely delicious guys. Great outcome for a first try. I remember the first time my family and I tried bobotie, when we visited South Africa. It was incredible. The flavours worked so well together and the taste was uniquely South African. We also decided that we would serve bobotie on all special occasions and on holiday's, such as Thanksgiving and Christmas, as opposed to some of the usual dishes we have on these occasions. Everyone are amazed when they try it out for the first time and end up asking for the recipe.

    This really looks like just a strange variation on meatloaf, where you cooked part of it first, and used fruits other than tomato in it. I have known of people mixing egg and milk into their loaf while raw, as well as seeing (never had it) people putting SOFT boiled eggs down into the raw meat, deep in the middle, before baking. As I have gone Vegan, I have to mention, this would be easy to veganise using either precooked crumbles, or the faux meats that resemble raw hamburger, and then JustEgg and some form of veggie milk for the custard. The cloves and allspice sound weird, along with the curry powder, but I think some people do use ground clove with ketchup for that zing. As you said, it is easy to vary all of this. The other herbs you used are along the normal flavour profile for meatloaf. Maybe add something with some MSG in it? Tomatoes have glutamate, as do mushrooms, as two examples. I had never thought to make a meatloaf as precooked and then baked (mainly because I went vegetarian in 1989, so I had never made a meatloaf). This recipe sounds like a perfect way to extend otherwise expensive ingredients, using bread heels or stale bread, rather than like mom did, saltines. However, if I make this, I would have to take care in describing it, because if I mentioned meatloaf, my husband is very picky about what he likes, and he would compare this to that and freak out because it has no tomatoes, nor onion soup mix.       It did seem like it was going to be meatloaf-y to us too, but it wasn't as dense. Maybe you could tell him it's sort of like a moist meat...cake? lol The clove/allspice does sound weird but they lent flavor that was subtle and pleasant (to us). Agreed, this could easily be veganized! We did use oat milk for this (most things actually 😅) Thanks for the suggestions, we'll have to try all sorts of things 'cause there's a boatload of bobotie in our future!
