When I was a kid we had a cook book called Die Gute Küche which was the ultimate Austrian cook book. And that one had an authentic Sachertorte recipe in it, which has the glaze made by cooking chocolate, sugar and water over a double boiler. It's so hard to make because the chocolate wants to seize up in the water and the sugar wants to crystalize. But when you do it right, the glaze becomes amazing. It's like chewy but creamy chocolate candy coating that goes crackly at the top.
