      Yes, you'll release that chemical anywhere on an onion when you damage the cells, it's a defense mechanism in the onion which ironically is partially what we find delicious about them. However if you crush your way through with a dull knife you'll release a ton more, which will make you cry. Just learning to sharpen my knifes and being able to cut through the onion smoothly drastically decreases this

      this is just a work of 15 to 20 mins ....in professional field its called the miza process you do not hsve a full day...just an hour or two to complete your mizza for rest the working day....including your backup mizza which will come in use if the first done is finshed...it happens when therr is lot of work in kitchen...when u enter first time in a professional kitcen..as a trainee for first few weeks this is a mndatory work for you to get used to high amount of work. which is normal for the daily working professional chefs

    A friend of mine was recently diagnosed as being allergic to onions and garlic, including chives, spring onions ( scallions) etc. I cried for him.

    I learned this from Chef Bhupi's channel. It's my go to method now. If I want it finer, I use the Marco Pierre White method.

    Once filled a dustbin with chopped onions for a burger van at Reading festival (1990). Nowadays they just open a big sack of them. I never questioned why we didn’t just plug-in a food processor because my job was a ticket into the place. Didn’t question the sanitation either. Same reason.

      your more likely to cut your hand with a blunt knife, due to the knife slipping all over the place like a salsa dancer. and as long as you tuck your fingers in, then you can go at a really fast pace without cutting yourself

    If you flip the blade and use the top of the blade to scrape away the chopped onion your blade will retain it's sharp edge longer. Scraping sideways curls the edge.

    First of all, nobody deserves to cut that many onions. Especially without goggles or summink.
    Second, that is a Chef level form of onion chopping. Not for a noob-noob at all.
    Third AND MOST IMPORTANT, He is able to do that so nice because of how maintained and sharp he keeps his knife. ANY KNIFE can be that sharp if you take care of it. And you SHOULD take care of it.
    Fourth, A sharp knife IS LESS DANGEROUS than a dull knife.
    Fifth, a *falling knife* does NOT HAVE A HANDLE.
    Sixth. Do not use a slap chop. You look foolish.

    Looks like a Victorinox knife: they retain a really sharp edge for quite a long time and can be ground down to a very fine edge (which obviously helps a lot with the slicing and dicing we see in this video here). Those skills don’t amount to anything unless the chef has got the right tool for the job.

    This is a very very very costly knife..This knife is not made in India..For Indians this is something to be very ashamed of!! Anyway... not all nations have this advanced technology...Tomtomming abt IITs is one thing and acing knife technology is totally a different thing..we will need at least 500 years or more to come at par with nations like Switzerland where KNIVES are concerned ....

    You can't chop onion more than 1 time because it release the water so it not good for taste
    So for fast chopping
    Don't decrease the quality
