In today's video I share with you many meals that I ate this week, all vegan and realistic, during the summer months. I love to take advantage of the abundance of fresh fruit and veggies and incorporate as many of them as possible into my meals. I try to eat healthily to fuel my active lifestyle and feel my best.

» RPL banana bread: rainbowplantlife.com/best-eas...
» RPL Delicious adobo sauce: rainbowplantlife.com/grilled-...
» Cold noodle salad: any noodles of choice, red cabbage, spring onions, red bell pepper, edamame beans or tofu (or protein of choice), thinly sliced lettuce (I like romaine), for the sauce, 2tbsp peanut butter, 2 tbsp soy sauce, 1 tsp chilli oil with the crispy bits, 1 tsp rice vinegar, 1 tbsp maple syrup, 1 tsp garlic powder, mix. Then add water and mix to get the consistency you like. Pour over salad and combine. Fresh ginger and fresh garlic would be nice in the sauce too.
» Chickpea pasta salad: pasta of choice, 1 can chickpeas, 1 tbsp mustard (i use whatever I have at home), 1 or 2 spears of a pickle diced, 2 tbsp pickle juice, salt, pepper, mayonnaise, thinly sliced lettuce. Mash the chickpeas, add the other ingredients and mix, then allow the pasta to cool before adding and combing.

One of the many things I love about you and this channel is that you're authentic. The breakfast at the start of the video made me laugh, because how real you are. So many influencers clearly lie and I hate it. Every time I come to your page I know I'm seeing the truth and I know we all appreciate it, so thank you
love a cookie for breakfast too!! 💕
Lots of respect for farmers/growers here as I garden too. But $5.00 for a tomato is ridiculous.
True Story: When I was in my teens (in the 1970’s) I got a wok for Christmas from my parents... the basic steel version that fits over a ring on the stovetop burner, and it came with a mini-shovel for flipping and scooping the wok contents. Now don’t laugh, but this was a time way before the internet and way before any type of international cuisine was made at home. I had no idea how to use it or what to cook with it. Thankfully, it came with a small instruction booklet which included some basic recipes. Why am I telling you this… well, now I live in the wilderness of northern 🇨🇦 with my partner and we have a massive garden and a greenhouse… and a 40-something year old wok. Over time, I have discovered that I can cook just about any veggie in my wok… and, not to do any wok flexing here, but whatever I cook in my wok always looks great and tastes delicious. Better yet, I can cook a lot of food in my wok cuz we love leftovers, AND food cooked in a wok goes great with rice or noodles. YUM!! To sum things up… sometimes a strange Christmas present can end up being y’er BFF. Long live the wok and fresh summer veggies!! Thanks for this awesome video today, Immy, and thanks, as always, for the stellar kitchen inspo!! Ⓜary💕
Hey there@@fuyopon thanks for sharing your story. I feel your wok love!! They are the greatest!! My Dad is 86 and he has an electric wok that he never uses… it is buried in the back of the cupboard. You can bet that when I go visit him I bust that electric wok with the shiny red lid out of the cupboard and cook up something healthy & yummy. Then everybody in my family says the same thing “We have a wok, but we never use it. We’re going to use it more often now.” Long live the wok!! Love your comment, happy wok cooking, and have a great day. Greetings to you from the wilderness of northern 🇨🇦. Ⓜary🌿

Hey Immy… I just thought you might wanna know that I made a massive batch of homemade pasta sauce a few days ago, and I used your “sneaky tip” of blending in a couple of cans of white kidney beans (cannellini beans) for protein, texture, and creaminess. Of all the things I have learned from you throughout the years, this “sneaky tip” has been one of the best tips ever!! I am shouting out a massive thank-you across the miles for this great plant-based cooking tip!! Now… can you please tell us what you do with those cute little Fairytale Eggplant🍆 (Aubergine) that you have been growing. (Can a veggie really be cute?) I love all veggies, but eggplant is my least fave. With that said, these Fairytale Eggplant look so adorable!! I love them already just from seeing them in your recent videos. How do you cook them? What do you make with them? Are they easy to grow? Thanks for this, and please keep those “sneaky tips” coming. Much love and mega-appreciation… from my kitchen to yours. Ⓜary💕
the pause after admitting the price of that tomato 🤣😂 we've all been there
and I was too awkward to take it back
oh yeah, there's no going back.. just regretful thoughts as you watch your shop total tally up
the way you cook is incredibly beautiful. This is why I really love these what I eat in a week videos from you. I get so damn relaxed. Thank you 🥹🫶🏻
music to my ears, thanks so much for taking the time to comment xx
You're one of my favorite yters :) The Green Chef partnership didn't really feel like 'you' though, especially with all the packaging these services come with. You are so creative on your own! I hope you can continue to work with companies you truly love as your channel grows
Everything you cook looks so beautiful! Thank you for sharing!
I usually love your 'what I eat' videos but I was so disappointed that the Green Chef meals you made appeared to come with all manner of sauces, spices etc in little plastic sachets. I don't suppose they are biodegradable sachets are they???
I live on charcuteries (yep, that's now a word) in the summer and times when I just don't want to cook. It also really helps on reducing food wastes because I can just throw all the stuff on a board and call it a meal. Also, that chickpea bulgur bowl looks so yummy.
Love love love those big plates of bread, veggies and cheese! And those tiny eggplants! Thank you for all of your inspiring videos 🥰
Delicious-looking meals! Thank you for acknowledging that time and energy are also part of the sustainability equation.
Everything looks so wholesome and delicious!
Your videos have inspired me to pick up knitting again. Your jumper turned out beautifully! I knitted my first pair of (successful) socks this week.
Me too… I also picked up knitting again. I’m knitting a cuddle doll for my niece’s new baby girl. There’s something about knitting that is so relaxing, isn’t there? I bet you’ll just love your cozy hand-knit socks as we head into Autumn. Thanks for sharing your knitting journey here in the comments. Ⓜary🧶
Hi, I am a worker in Germany and I was guided to your channel by a sustainability app. Most of the week including the weekends i have little time to shop, cook and enjoy my meals (i try as much as i can, i also have a family), your house, your kitchen and your kitchen gear look incredible, almost impossible (to me 😂). I would like to suggest that you could maybe start a new channel only with your recipes and preparations. Anyway, thank you
Oh my goodness! Can you share recipes for the pasta shell salad and cold noodle salad? Both look amazing! 😋
omg I'm the worst! Sorry for forgetting to put the recipes in the description...doing it right now xx

Hiii!!! ❤ I’ve been following you for a few years now and must say that you inspire me to try and challenge myself to do work that is better for the planet and myself. I’ve fluctuated between pescatarian and always try to be vegan and you make it look so easy.
Thank you for sharing your thoughts and food recipes! Im done a lot of swaps and now am making time to cook more meals . Just wanted to say hi and can’t wait for new seasons . 💜🥰😁

Such a mouthwatering vlog all the food you made looks so delicious, l love your channel 😋 ❤ 😍 ♥
You make wonderful wideo, don't give up 😊
Have you ever tried a different nut instead of pine nuts....they so expensive :) I almost always do walnuts or sunflower seeds now....but i've done almond and pecan too....and then also lots of parsley to stretch the basil :) another green goodness....
also love the vid as usual :)
Immy do you have a Grocery Outlet near you? They are a discount grocery store and are great for saving money on some items because they are going off soon or out of season.
These all look delicious! Would you be able to write some of the recipes please?
sorry I'm the worst, adding them to the description now xx
Where do you get your knives? They look so nice and I'm in need of some good chopping knives. :)
$5.00 for a tomato? Are those the heirloom tomatoes from Whole Foods? I was looking at those and was thinking of doing a tomato dish with them but if they're that expensive then heck no!
that noodle salad looks so good! do you think the sauce could be good with like tahini or cashew butter? I'm allergic to peanuts and almonds :(
1000% yes
hi immy been watching you since the pandemic and id like to see some celiac disease friendly meals that include gluten free bread or anti inflammatory meals because I have celiac and gastritis id really would love to see stuff like that thank you
Hi! In Italy we do not put lemon juice in pesto. That's not an ingredient we use for the recipe. ;-)
Oh I know, I just like putting lemon in it
do you mind linking to the rainbow plant life sauce you mention? thanks
so sorry I forgot to do this! Have added to the description now but also here is the link: rainbowplantlife.com/grilled-tofu-skewers/
