I’m not vegan, we don’t eat much meat, when we do eat meat it’s only ever from our local farm, since watching your vlogs I’ve felt inspired to bring more veg into our diet and we’ve become much healthier for it (we have a Riverford veg box every other week, we live just outside of Truro) I personally like the more casual vlogs, but as ever, thank you for such gorgeous content! ♥️🐚
Helloo, I've been your subscriber for years now. I am Indian, currently living in London. For the roti, its always better to knead a softer dough. This give you fluffier roti's. Also, roti traditionally is only whole wheat there is no plain flour involved. I think the flour you've used is more of a UK style wholemeal flour and its completely different from what we use for rotis. If you're ever interested in having more authentic roti's get "chakki aata" from brands like Aashirvad, East End.

I love the step by step cooking you do. Sometimes recipes aren’t that clear or can be a bit daunting. Watching you do a step by step version not only makes it look so easy but is much clearer to understand too. And sometimes you vlog recipes i can’t otherwise access like the gardener’s pie as I don’t have a computer to download your ebook so I do feel I miss out in that sense so these vlogs really help. I recently got your vegan cookbook on Kindle for Christmas and we love it so much! The extra effort you put into these step by step blogs is much appreciated so thank you so much.

My tip for paella is to include canned artichoke hearts. The brine they're packed in gives a flavor similar to seafood which is traditional to paella. I also use them to make "tuna" salad. Annato seed powder is a cheap substitute for saffron if you can find it (it's commonly used in Caribbean cooking). My tip for organizing the weekly shop is to keep a sticky note on the refrigerator door, and whenever you run out of something during the week, write it on the sticky. This saves having to root through all your food stores every week, you just have to add to the list whatever ingredients you need for the recipes you'll be cooking in the coming week that aren't what you normally keep on hand.

To answer your question, I personally prefer step by step recipe videos and am more lilkely to watch those so i definitely appreciate the effort. I still watch some vlog style videos for inspo or to have on in the background but im less likely to click it or finish it

I am licking the jar clean! your tahini dressing recipe is so yummy. I have made and tasted so many different versions of a tahini dressings that is by far the bestest. Thank you also, I made your chickpea flour omelette for the first time with fried red onions, mushrooms, and kale - OM@! another yumm.... will be making this now more regularly.

Hey, Maddie! I've been a big fan of yours for many years, and I never skip one of your videos!! I am commenting because you asked for some tips for the paella. Well, I'm not Spanish, I am catalan but I can gove you some, even though yours looks so delicious and well documented! One tip to make it more traditional would be using vegetables such as green pepper, green beans and artichoke (and also something called garrofó, which is kind of a big legume). The peas would be good but not at the end of the paella. One thing you did marvelously was to not mix the rice once you've poured it; and to optimize the results you could turn the heat up right before the end (only for a minute, so you get a fine layer of "socarrat", which is a layer of caramelized rice on the bottom and on the sides) and also cover it with newspaper for five to ten minutes after removed from the heat. And then, eat it straight away (otherwise, the rice gets bad). I hope these tips -which of course, you surely don't need- are useful. A hug to you and Alex from Barcelona!

Great video! Loving how fuss-free your cookbook is, a brilliant mix of recipes that aren't too intimidating, and plenty affordable. I love that there is something for everyone and they are easy to follow.
Watching your videos is super helpful for me, as just seeing someone chop ingredients and talk through how they are doing things makes it easier to follow recipes when you are not confident at cooking yet!
I enjoy both styles of videos honestly~! ❤ Do you have any nutritional drinks or supplements you enjoy? I am trying to introduce more variety in my diet, following recipes like yours, but I am also considering if a nutritional drink/powder or something would help to make sure I am not missing anything out...when I tried searching, most were protein things which aren't quite what I am looking for 😅 so if you know any good ones I would love to know, thank you 💖

Been following you for years, and though I’m not vegan I’ve been « flexy » for a while and can only notice how being open-minded (like you are) rather than antagonizing has had a positive impact on people around me. More people being companionate towards animals, more aware about climate change, and more curious about their health/noticing they don’t need animal protein. Thank you for your inspiring and realistic approach.

I usually buy kallo and mix with water but this year I want to make more of my own with scraps!

A good tip when you make porrage you need 10 minutes on the gas when it comes away from the side of the pot it is ready that is how my granny taught me how to make it and I put salt in mine that is the way I like my porridge with milk or cream but each to there own 🐝🐝🐝

I'm in Canada but you will have the Quaker oats brand as well. The ones that take longer to cook taste better.

I use Madeline’s method to make oats and use the large flake oats, quick ones will cook too fast for that method. I’m in Canada but should be the same I think 😅

Maddy it’s always great to see you and Alex in the kitchen. I would love to go vegan but there has been so much controversy about Soy products. If possible would you mind mentioning this in one of your videos! Loved this vid, thank you!
There is genuinely no need to worry about soy products! All tofu is organic and there is only research showing the positive impacts of soy! Unless you are allergic it is a wonderful source of protein, healthy fats, fibre, iron, potassium and studies actually show that it reduces your risks of a range of health problems such as heart disease, cancers and stroke! The only issue would occur if you ate it in excess, which would be the same for any foods

If you look into the history of the "soy controversy," a lot of it goes back to a Men's Health magazine article in the US that claimed soy was going to feminize men and cause them to grow breasts. It was based on a case study on one man who drank massive and unusual amounts of soy milk daily and developed breasts. They went away after he stopped. But subsequent clinical studies have shown that this was a very unusual case and feminizing effects have not been found to be associated with daily soy intake. There is some interesting information out there online and on podcasts about how uninformed pop culture magazine articles shaped our cultural opinion on things like soy and MSG. Worth a Google!
Hi. Indian here. I think your dough was a bit dry. Add a little more water next time. Indian rolling pins are different from the ones you have. Treat it like a dumplings dough if you know how to roll that
I just looked up ackee, and found it's illegal in the US! We're not to be trusted to not eat the wrong parts of it, so... thought that was interesting!
It can be imported if canned but I expect demand is very low so most suppliers don't bother to stock it .
