Hooray for more witchin' in the kitchin'. Kombucha making is so much fun. I was a head brewer for a kombucha company in Michigan for a while. The tip I like to share with folks is to make a tea using 75% green and 25% black. It seems strange at first to mix the two, but that ratio always produced the best tasting kombucha, in my opinion, and seemed to support the health of the SCOBYs really well.

Can you use decaf tea’s. In the past I used regular green and black tea but I stopped making it because it got to expensive. I still have my SCOBY hotel and think I want to start my crock up again. I gave up caffeine two years ago and wanted to try making it with the decaf teas now.
@@ahutton49 Good question! Decaf tea can work, but your SCOBY won't be very happy. Because most decaf teas are made using a chemical process, this tea is then rough on the SCOBY's health. What's frustrating is despite the chemical process, there are still trace amounts of caffeine left in the tea. If the priority for you is to limit as much caffeine as possible, then you could brew with decaf tea and then give your SCOBY regular black tea recovery baths in the hotel between each brew. Some other things to consider with caffeine in Kombucha are: - Black and green tea have l-theanine which helps our bodies absorb caffeine more gently than coffee. - Green tea has less caffeine than black, which is another benefit to the 1:4 black to green ratio. - On average, only about 30% of the caffeine in tea remains by the time the kombucha is ready to drink. - You can remove a good portion of caffeine naturally from tea by doing a 30 second pre-steep in a separate vessel. You can give that portion to a friend or water your plants with it. Then you use the second steep to make your kombucha. This process won't remove all the caffeine, but it will remove that initial release of caffeine. Downside is you lose a bit of the tea flavour profile, but this isn't an issue if you are flavouring your batch in the second fermentation anyway. - What you add in the second fermentation will further dilute the caffeine. I wish I had a recommendation for 100% caffeine free brewing. I'm still learning myself. I have found a lot of great resources through Kombucha Kamp, so that may be somewhere to look for more experienced advice. Best of luck!!
I made kombucha for the first time this week! I have some tips from my beginners experience: - if you're going to do a second ferment with fruit, use either juice or whole pieces. I put my fruit in the blender, and I had to strain it off before drinking because it was too chunky. - put a towel over your swingtop bottles before burping!! Mine was so pressurized the first time, it got kombucha all over my kitchen. The towel really contains it. - if you're not going to keep both scobys (the old and the new), compost your new scoby that you get on the top, not the old one. The old one is the really established bacteria, while the new one is just a baby and not established.
Thank you! thank you! When I saw this I was so excited about making tempeh without plastic. I have been doing it in small batches in my food dehydrator with wax paper, but the edges get dried out. My Brod and Taylor proofing box just arrived, but first I am making soy yogurt. I make soy milk anyway, so this is the logical next step. Vegan yogurt is like $8 a carton...$2 a serving, so making from scratch is more like 25 cents a serving when you buy soybeans by the #25 bag. Will make tempeh after, also excited to try garbonzo tempeh. Hugs from Seattle.

Yes, I make a continuous brew of Kombucha and love it. I got it from Rigel Smith's youtube page. It saves so much money making your own Kombucha and then flavoring it.
I made dal yesterday-I love that it’s so easy: as long as you have the spices and lentils or split peas, you can add any type of veggie to it. It’s a good “cleaning out the fridge” meal.

I bought a 6-litre glass container with a spigot to make my kombucha. I found that adding a touch of fruit juice after the intial fermentation helped to boost the bubbles. Everything I did I learned by reading kombucha blogs on the internet. I had fun playing with the quantities of apple and blueberry juice to get the right amount of everything (flavour, sweetness, bubbles)! Have fun with the process!

@@marycharlebois6627 Yes, I added the juice when I strained the fermented kombucha into the bottles. I added about 100ml total of juice to a 1-litre bottle. I kept the bottles at room temperature for 3-4 days before putting them in the fridge. The juice gives the kombucha just that little bit more sugar to make it more bubbly. My favourite combination was 70/30 apple/blueberry. The kombucha was plain flavoured and fermented with just tea, sugar and the SCOBY. Hope that helps!

Immy, GREAT video as always! I'd love for you to make videos about your marathon journey- I'm a distance runner (running two halfs this year) and would love to run a marathon some day. The interesting thing about running is when you first get started it's so accessible, affordable, and sustainable, but once you get into distance running it can be pretty expensive (shoes, sports bras, gear) and even wasteful (sports drinks, goos, protein powders/bars, etc). I've been trying to keep my journey low waste but I'd love to hear your thoughts, and of course cheer you on!
Ohhh that's so awesome to hear! Definitely will be sharing more and how I try to navigate the sustainability aspect. I'm not a fan of the gels etc as I've used them before during my last marathon... so we'll see what I'm able to find as an alternative!

Ooo kombucha mother! Omg homemade kombuchas are so fun to play around with. I am by no means an expert. I had a ton of fails to be honest. There’s a kombucha channel here on YT. Back when I was playing around with it I ended up doing mostly plain kombuchas bc all of the flavor experiments never worked for me.

I love kombucha and loved making my own when I could. My favorite way was adding cherries and either vanilla or almond extract to the second ferment. Tasted like a very subtle cherry vanilla coke!

FUN Kombucha Story: We love kombucha, but it is sooo expensive!! A few years ago my partner, who is an amazing DIY-dude, began gathering a few ingredients and basic supplies so he could make it at home (cuz we need more stuff on top of the fridge🤣). He purchased a starter from the health food store, and although I knew what it was, I could never remember the correct name for it (a scoby… which I have recently learned actually stands for “symbiotic culture of bacteria and yeast”). I always called it a “scooby doo” and, well.. the name has stuck!! Forget the scientific name, in our house it’s called a scooby. Are there any scooby doo fans out there? Haha🐶🤣 But seriously, Immy, you will save so much money by making your own kombucha at home… and, if it happens, I would love to follow along on your kombucha making journey. Kombucha is soooo easy! And yummy! And when you are tired of it, you just leave the mothers to 'hibernate' until you need it again. Looking forward to seeing yours! Lovely video Immy!
How long do you let it hibernate for? You just have to leave it in some starter liquid, right? Do you throw that way once you're ready to give it a go again, or do you use it?
@@leonore3349 I have left mine in starter liquid for over a year. If it grows mould then you should throw it away but this has never happened to me. When you are ready to start again it is best to make a batch like you normally would but to throw that liquid out and use the same SCOBY(mother) for a second batch which will be good to further ferment and drink. There is nothing wrong with the first liquid but for best taste, the second batch tastes better. Every new batch of Kombucha makes a daughter SCOBY and you can then compost your old SCOBYS or give them away. Hope this helps😊😊

I've made kombucha, but eventually my scoby went bad, and a friend got me to make water kefir instead. It's similar to kombucha but easier. I'm so impressed with your tempeh-- it looks better than store bought. Do you steam the tempeh before eating? I haven't eaten it much, but I thought it is suggested to steam it to lessen any bitterness. Thanks for another great video!
a suggestion: a microplane or box grater to process your garlic and ginger will change your kitchen routine, guaranteed I've also had my own kombucha moment. it was fun! I would say the biggest 'waste' or product of it will be more replicas of the OG SCOBY/mother. You may want to figure out a way to deal with the excess (giving them away on a buy nothing group is an example) because it will pile up quicker than you think.

i have been getting into more ethnic plant based meals. right now I am soaking some black eyed beans to make african red red stew. making it plant based and truthfully leaving out the veggie buillion cube since I can't find any in my area and it's nothing but salt really. but already thinking I might need a bigger pot to cook it all in, LOL.

Yes so far I have! I find that bulk shopping is in more 'normal' supermarkets and so more accessible... but a lot of things are definitely very expensive. Its useful for spices and if you're really bulk buying things like 25lbs of yellow split peas but I find groceries to be incredibly expensive in the US in general. Haha pink cookies all the way!
My mother used to make kombucha all the time for a year or two, but we made her stop because the smell is unbearable, I don't know how you have found the smell, but good luck.

Ooo kombucha mother! Omg homemade kombuchas are so fun to play around with. I am by no means an expert. I had a ton of fails to be honest. There’s a kombucha channel here on YT. Back when I was playing around with it I ended up doing mostly plain kombuchas bc all of the flavor experiments never worked for me.

I love kombucha and loved making my own when I could. My favorite way was adding cherries and either vanilla or almond extract to the second ferment. Tasted like a very subtle cherry vanilla coke!

FUN Kombucha Story: We love kombucha, but it is sooo expensive!! A few years ago my partner, who is an amazing DIY-dude, began gathering a few ingredients and basic supplies so he could make it at home (cuz we need more stuff on top of the fridge🤣). He purchased a starter from the health food store, and although I knew what it was, I could never remember the correct name for it (a scoby… which I have recently learned actually stands for “symbiotic culture of bacteria and yeast”). I always called it a “scooby doo” and, well.. the name has stuck!! Forget the scientific name, in our house it’s called a scooby. Are there any scooby doo fans out there? Haha🐶🤣 But seriously, Immy, you will save so much money by making your own kombucha at home… and, if it happens, I would love to follow along on your kombucha making journey. Our favourite is the good ol’ ginger flavour. Keep us posted… please?? Thanks for all your awesomeness!! 💦🌎Ⓜary💕

Kombucha is soooo easy! And yummy! And when you are tired of it, you just leave the mothers to 'hibernate' until you need it again. Looking forward to seeing yours! Lovely video Immy!
How long do you let it hibernate for? You just have to leave it in some starter liquid, right? Do you throw that way once you're ready to give it a go again, or do you use it?
@@leonore3349 I have left mine in starter liquid for over a year. If it grows mould then you should throw it away but this has never happened to me. When you are ready to start again it is best to make a batch like you normally would but to throw that liquid out and use the same SCOBY(mother) for a second batch which will be good to further ferment and drink. There is nothing wrong with the first liquid but for best taste, the second batch tastes better. Every new batch of Kombucha makes a daughter SCOBY and you can then compost your old SCOBYS or give them away. Hope this helps😊😊

Loved the video, as always. I love to ferment things, but I’ve never tried Tempeh. I went to cultures for health and ordered the starter. They did send me an email asking why I chose to order from them and I let them know it was because of your video. Hopefully that’ll help you out in future!

Kombucha is the easiest thing to make, really. I love the one I'm currently going through, with earl grey and just a hint of hibiscus.

I've made kombucha, but eventually my scoby went bad, and a friend got me to make water kefir instead. It's similar to kombucha but easier. I'm so impressed with your tempeh-- it looks better than store bought. Do you steam the tempeh before eating? I haven't eaten it much, but I thought it is suggested to steam it to lessen any bitterness. Thanks for another great video!
I usually fry the tempeh in the pan to make it a little crispy on the outside and use some sauce!

I've also had my own kombucha moment. it was fun! I would say the biggest 'waste' or product of it will be more replicas of the OG SCOBY/mother. You may want to figure out a way to deal with the excess (giving them away on a buy nothing group is an example) because it will pile up quicker than you think.

Also heard a Friend say They'd scramble it up!

Yes so far I have! I find that bulk shopping is in more 'normal' supermarkets and so more accessible... but a lot of things are definitely very expensive. Its useful for spices and if you're really bulk buying things like 25lbs of yellow split peas but I find groceries to be incredibly expensive in the US in general.

Its in a bread proofing box! I use a glass container with a lid that I leave ajar and put it in the proofing box.
