I just made these, and wow they are f***ing incredible. I garnished it with honey and chives. Was absolutely phenomenal. Thank you for introducing me to this recipe.
Sometimes the meat doesn't cook all the way, best option is to add it into the oven for an extra 2-3 minutes just in case. You can thank me later, I've made these before 🙏✨

Most Middle Eastern grocery stores sell kofta mix, which is a ground beef/lamb mix that already has all the spices and herbs in it. That would save a lot of time for when you don't feel like doing a lot of prep, all you would have to do is mix in the feta.

The main spices you're likely to see in some combination or all are: cumin, coriander, allspice, paprika, cinnamon, nutmeg and cardamom. Some people use sumac, cayenne and/or Aleppo pepper as well. For herbs it's usually garlic, onion and for the green herbs parsley and cilantro, although it's not unusual to add a bit of mint and/or dill as well.
I think the point is make it your own based on the rest of the flavours of the dishes it’s not that confusing really, like is it Middle Eastern, Asian, Mexican etc that gives quite a clear start point of what’s probably going to work with the ingredients 😅
just add a bunch of spices, try them out, there's more than just salt and pepper, and nobody is going to arrest you for using too many, so just try and see what you like

Real entrees take ours without help and no baking or boiling required for tenderness. So, 30 minutes between prep and a finished meal, ready to eat is not too bad.

A sandwich shouldn’t takes more than 5 mins to make and all u need to clean afterwards is a plate and knife.

If you have ever been a guest in an Arab/Indian/Souteast Asian/etc. household you will know what I mean, they like to prepare huge spreads of food with various dishes at the same time. 30 min of cooking is almost nothing for them.

However, I also don’t eat meat and so that’s one less thing for me to cook in my personal meals. What I make when I don’t feel like cooking is tostadas with beans and cheese, I only have to fry the beans to put them on the tostada shells and then I have prepped and pre-cut tomatoes, lettuce, chillis, and onions. Top if off with hot sauce and sour cream and we’re good to go. 😋
@@rarb-ie7ez When I don't feel like cooking I have an apple with peanut butter, cottage cheese with a mix in of fruit or vegetables, a sandwich with fresh fruit or vegetable, toasted cheese and bread, heated up leftovers. That is all real food that doesn't require the level of cooking and prep this recipe does. It does look very good and I'm saving it for when I feel like cooking :)

A thing I don't like that cooking influencers do is say that a certain meal is made when they don't feel like cooking, yet still have a meal that takes longer than 10 minutes to make. The recipes look amazing and everything, but it clearly isn't a lazy meal. This still uses a many items in the kitchen that will need to be cleaned. This still takes a long time to prepare and has ingredients that may not always be in your kitchen (feta for example). It's a good meal just not a lazy one.
If you are of Middle-Eastern background then this meal is indeed considered a "lazy" day meal. So many of our Middle-Eastern dishes are quite time consuming to prepare, we have stuffed and rolled everything🤣, dishes that require homemade dough, slow-cooked meats, multilayered rice/veg dishes, and the list goes on and on! So if I get to stuff pre-ground meat into some store-bought pitas then I would feel like I did nothing compared to all our other ethnic dishes! 🤣

I got invited for breakfast before while we were going to be fasting. I can’t remember how many side dishes were made. There was homemade hummus, ful, meat, spinach and cheese fatayer, tabouleh, dates stuffed with cream cheese, and many other side dishes that I can’t remember as it’s been years. Meanwhile I would’ve been happy with just one of those things for breakfast. I’m sure she did extra because of having guests, but I’ve seen it so many times it can’t be exaggerated that much.
Arayes in Jordan are meat with diced onions, green peppers and tomatoes with spices. You can add pomegranate molasses to the mix or dip with after cooking. Gotta try!

Tahini dip: Tahini paste, salt, pepper and lemon juice, mix them and they will turn into a dry paste, and then slowly thin it out with water til you reach desired consistency.

Just cook them until the outside of the bread is crispy and it‘ll be fine! They will be cooked all the way through and if you’re using ground beef, there really is nothing to fear if they’re a bit medium/rare on the inside. Probably not going to happen anyway, but really nothing to worry about!

1 tbsp finely chopped parsley , optional

3/4 tsp ground allspice (sub mixed spice)
1/2 tsp cayenne pepper (reduce/omit for less spicy)
1 1/4 tsp cooking/kosher salt
Whipped tahini yogurt sauce (optional):

Just cook them until the outside of the bread is crispy and it‘ll be fine!
They will be cooked all the way through and if you’re using ground beef, there really is nothing to fear if they’re a bit medium/rare on the inside.
Probably not going to happen anyway, but really nothing to worry about!
