Interesting & entertaining 👌 you both did very well in the interpretations of the moves. In terms of challenges, approachable and scalable challenges would be good, for people of different abilities, but aside from that can't think of anything specific. I made a version of the hanging take t-shirt off challenge where i also changed shirts and then did maximum pull-ups before coming down, but no one else has tried it

Without a horse or horsey object no ? First I'd visualise the maneouvre as it arose during horseplay then get a balanc ball or actuall rocking horse or space hopper. I feel the children who found the moves likely did so.
