Hungarian Mushroom Soup Recipe - Chef Tips

- This Hungarian Mushroom Soup recipe is inspired by a dish I enjoyed at Old Wives Tale in Portland, way back in 2008. Print the recipe! cookingsessions.com/hungarian...
I've put my own spin on it, of course, complete with garlic-shallot puree and a gremolata topping. I think this is way better than most cream of mushroom soup recipes, and I hope you'll agree!
Hungarian Mushroom Soup
1 1/2 pounds button mushrooms, sliced
2 tablespoons butter
2 cups diced white onion
1 teaspoon garlic-shallot puree or 1 minced cloves garlic
1 teaspoon kosher salt
2-3 teaspoons dried dill or 3 teaspoons fresh dill
1 tablespoon of Hungarian Paprika
2 teaspoons fresh lemon juice
3 tablespoons all purpose flour.
2 cups chicken broth, mushroom stock or vegetable broth
1 cup heavy cream or milk
1/2 cup sour cream
Fresh cracked pepper to taste
Garnish:
Zest of 1 lemon
Small bunch of Italian parsley.
Heat a large stock pot over medium heat. Add 2 tablespoons butter. Melt down. Stir in 2 cups diced white onion. Cook down for about 5 minutes. After a few minutes, add 1 teaspoon garlic-shallot puree or 1 minced cloves garlic. Stir well.
After 5 minutes, add the sliced mushrooms. Next, add 1 teaspoon kosher salt followed by 2-3 teaspoons dried dill or 3 teaspoons fresh dill. Next, add 1 tablespoon of Hungarian Paprika. Cook down 10-15 minutes. Add 2 teaspoons fresh lemon juice and 3 tablespoons all purpose flour. Cook down and stir for about 5 minutes.
Finally, add 2 cups chicken broth, mushroom stock or vegetable broth.
Stir, reduce heat to medium/low. Cover and cook for about 10 more minutes.
Next, stir in 1 cup heavy cream or milk. Finally, stir in 1/2 cup sour cream and add fresh cracked pepper and more salt if needed.
Serve with garnish of lemon zest and chopped parsley. Enjoy!

This was absolutely superb! I have never had a mushroom soup this good and my wife agrees. Definitely will be a regular inexpensive delicious meal.

I’m Hungarian, and this looks pretty accurate. Especially important is to NEVER brown the onions. Low and slow until they are glassy and sweet. For the paprika, please please PLEASE use authentic imported Hungarian paprika. I’d stick with sweet (édes) paprika, my favorite is from Kalocsa, but Szegedi will do too. Just not that sawdust you get from the grocery store, it has no flavor. I don’t add garlic to this, especially not that amount - it throws the flavor off. Sour cream - YESSSSSSS!!!! Sour cream and good paprika - two staples in a Hungarian kitchen. Nice job.
Just a note - I’m thinking of starting a Hungarian cooking channel myself. I’m an old fashioned Hungarian cook, almost never measure anything, even baking. I just made a video of how to make gulyás leves (Gulyás Soup) for a Christmas present. Maybe I’ll start with that one, if there’s interest.

Does it really make a lot of difference in the taste if I used Spanish paprika?? I live in a country that does not import Hungarian stuff. And what's the difference between Hungarian paprika and the others??
princess melody if you absolutely can’t get Hungarian paprika then go with the Spanish one but make sure it’s NOT smoked.

Can I make a suggestion? Break the stalk out of the mushroom. Place dome side up and chop. To increase the flavor of the mushrooms, Double the quantity, and place half in a non-stick pan and reduce by 75% volume. Do not add anything, gently cook off the moisture that forms. Add to the soup in the late liquid stage. Nice videos, many thanks, and greetings from Africa.

How does that increase the flavor of the mushrooms? Curious girl .
I have a Bulgarian friend and he taught me, instead of drying the dill ( it looses a lot of its flavour ), take the fresh dill, rains it , cut it really small and then mix it with a tablespoon of salt in a plastic bag and after keep it in the frizzer . The aroma becomes even more enhanced!
One of my favorite recipes, I made it so many times with just regular paprika once then some smoked paprika I have to say it's delicious, and I crave it all the time, specially knowing mushroom has a lot of vit D which a lot of people including me are deficient in.

The only thing I did differently is that I put mixed herbs instead of dry dill, because I didn't have any.

The only time that I had mushroom soup was at a Hungarian restaurant! It was absolutely delicious!
Thank you! It is the first time I make mushroom soup and it was easy to prepare and turned up delicious! Mine ended a bit on the reddish side because I used double the paprika and did not have dill but it was really good anyway.
I had to watch this as I was a fan of Old Wives Tales in Portland way back (1990s) as well. Their soups were the best and I appreciate your sharing this one!

As a Hungarian man who loves cooking I must make a couple of friendly remarks: 1. there are as many choices for fat to use in sauteing as households in Hungary, but I believe most people use some sort of oil or lard instead of butter to saute onions 2. garlic is indeed a must-do in pretty much everything, but we never use shallots 3. kosher salt is kind of a fancy thing in Hungary 4. I know it's such a waste, in home cooking we always use water instead of stocks 5. dill ususally goes in pickled stuff and squash pottage (and a few other recipes), but only true gourmands would pair it with mushrooms while lemon juice/zest is exclusive to desserts here 5. very cute of you to prevent "insult injury" by adding sour cream, we always say sour cream upgrades anything it's added to. :-)

I love mushrooms, but I have been cutting them wrong my whole life. As the saying goes, you can learn something everyday. I will absolutely be making this mushroom soup. It looks so yummy.
I just snap off the stems (they can be wody) and slice the caps. Don't need extra cuts

Italian parsley in a Hungarian dish 😄 Actually flat leaf Italian parsley is much wider used in Hungarian cuisine than curly parsley. So it is quite right😉 And adding sour cream is a major plus 👍

My GF is a soup addict whereas I grew up on canned swill and never liked soup. Until I ordered it I’m five star hotels.
I’m a student at the You Tube Culinary Academy and recently learned how to make stocks ( which of course is why 5 star hotel soups are so darn good )
Making stock is therapeutic for me .
Today we wanted Chicken Soup and we had a whole chicken and some lovely Chicken stock in the freezer.
We watched your Chicken Soup recipe where you used the whole bird to make stock and soup. That was an hour ago. Our apartment smells like a professional kitchen now with garlic , onions , fresh thyme etc etc.
Of course I subscribed and liked. Thank you for patiently teaching me and making my Lily so happy.

It’s a wild mushroom season here in southern Poland. … Farmer’s markets are overflowing with incredibly, beautiful crops of mushrooms. … Tomorrow I am going to get some and will make this soup with those mushrooms! I never tried dill and mushrooms together… My thing is thyme with mushrooms ( I have some fresh in the garden) and some Japanese tamari soy sauce, if I have it ( pricey and hard to find it here!). When the wild mushroom season is over, I ‘ll be using regular white mushrooms with a little addition of dried (wild) mushroom powder.

I love pickle soup, too. Sometimes I start with a pork or beef stew base (with Hungarian paprika, of course...) and I finish it as a pickle soup with some soured cream. It's so refreshing.
For combining sour and creamy, two of my favorites are tők főzelék and korhely leves.

I doubled the recipe so that I could share and freeze some. I used mushroom broth and a few shiitake mushrooms rehydrated which give and Umami depth of flavor. I also used homemade plant milk which I can make as thick as cream and it was truly delicious! It could also be frozen because there was no milk or cream to break. So all around good stuff! I'm thinking of making this for Thanksgiving this year.

If you added wild mushrooms, and even mushroom stock, you would get an even greater depth of flavour. A smokey Hungarian paprika also would give another dimension to the soup.

As a true Hungarian, I really love baked beef bones then pour the lot into a soup pot and bring to a gentle boil with onion, garlic, carrots celery and root parsnips celery root is good, any left over veggies! Then let slow boil for one hour and then reduce by a strong quarter. Drain that for mushroom soup 💫

stogies3 thanks so much for the support!!! I and my wife are cooks I am from Hungary and she is Swedish.We cook at home! But people are still using the easygoing ways, and then never know the value of baked bones for 4 hours on medium high heat 275 degrees is perfect 👌🏼 with this deep roasting, when you are done! Pour that bones and all into a soup pot! With all the veggies and water to cover bring it to a boil and turn it down to a very soft boil for 5 or 6 hours and let it reduce without a lid! This is amazing flavor! I buy enough bones to cover a roasting pan too.

Best mushroom soup I have seen. I like that you keep them and not blending up. Ignore the stupid comments, as this people talking to look they know it all. I never wash mushrooms, just wipe with a tissue for the right reasons. As well they don't need to be cut specific as this smart a.. is stating, again for the right reasons. Thanks for sharing

This man has serious knife skills. I appreciate that. How many supposed "professional" chefs do we see especially on food network that have no discernable knife skills AT ALL. I also like this guy's soup pot and overall no nonsense approach. This is how you produce a cooking show!

Great recipe which I will definitely try. As for cutting the mushrooms: I used to cut them the same way ... but always had some added protein in my food - LOL - my fingers didn't like it. So I got myself a "champignons cutter" and ever since I'm fast in cutting, the slices are even and no more cut up fingers!
