  • The panettone, an historical Christmas recipe coming from Milan, has become over time the most famous Italian Christmas "cake" in the world. We 've been to Bologna to discover its secrets together with Gino Fabbri. Within his laboratories, the pastry chef shows us all the different steps of production: from the refreshment of the yeast, to the different dough, up to the personalization given by the choice of the aromas.     Io ho avuto la fortuna di conoscerlo di persone e di poterci andare ogni volta che voglio... GINO è una persona unica.... UOMO di grande cuore che fa un lavoro con passione... Non si tira mai indietro per scambiare due parole con chiunque vada in pasticceria da lui... E vederlo dietro il bancone con il suo cappello e uniforme da pasticcere insieme ai suoi dipendenti come fosse uno di loro non ha prezzo.... grazie Gino

    Ho avuto l'onore ed il piacere di assistere ad una sua masterclass; è molto bello che il miglior pasticcere d'italia sia anche un autentico Signore.
    Gino Fabbri è una persona di rara eleganza e io, che da umile pasticcere ne ho visti tanti di volponi che si spacciano per Dèi discesi, mi sento fiero di lui... perché è una persona VERA ed è davvero un ambasciatore del gusto del nostro Paese nel Mondo.     Adorei todo o processo com muita qualidade do início ao final desta maravilhosa receita. Fiquei impressionado com o modelo da batedeira ou masseira, nunca tinha visto algo deste tipo. Gostaria muito de estar presente durante este processo - cheguei a imaginar os aromas, deu água na boca. Adoraria degustar este panetone juntamente com a minha família no final de ano, seria maravilhoso, mas, a distância torna um tanto impossível. Fico apenas nos bastidores admirando e salivando.     So many things I never knew about panettone. Thank you for a more complete picture of how this delicious "bread" is made! I particularly like that rack they use to hang it upside down while it cools. Brilliant!!!

      In Italy a craftsmanship panettone like those can cost also 25/28€! But it's fantastic. I was surprised when I met people from abroad that, knew panettone, but didn't know it's a Christmas cake!

    Highly customized baking process for best quality baking. This is why you dont want to make this at home. Because best of the best, takes a lot of time to make. Great job guys!!!

    Che bel panettone. Qui in Brasile abbiamo anche i nostri panettoni, ma senza glassa. Qui questa glassa di zucchero e mandorle abbiamo solo nelle colombe pasquali.

      la glassa è opzionale, quello tradizionale di Milano infatti è privo di glassa.

    Video stupendo! Sembra cosi' facile, e' una meraviglia! Ma direi che il Tiramisu, la pannacotta e il gelato vengono riconosciuti all'estero ancora prima del panettone.

    Grande chef... Secondo me lei è una legenda del panettone.... Ragazzi e incredibile, tutti i passaggi la materia prima di grande qualità... Voglio vederlo in televisione perché veramente è molto bravo e esperto se siete d'accordo fate un like magare riesce a vedere il mio commento perché veramente merita di andare in televisione bravissimo

      Se tu lo conoscessi di persona.... Io anche oggi sono passato dalla sua pasticceria... E vederlo dietro il bancone come un qualsiasi suo dipendente fa la differenza...     É lindo ver a dedicação de um profissional ao que faz para conseguir a excelência no final. Fiquei impressionada com a quantidade de manteiga nessa receita em relação à quantidade de farinha: 3.400 g mais 5.500 g para um total de 11 quilos de farinha, será que está correto?

    Hacer un panettone a diferencia de un pan dulce es abismal, varios procesos de impasto, fermentación y el uso de la masa madre es un proceso que puede llevar en una semana para elaborar un pan tradicional italiano que es un arte en su elaboración que te llevaría hasta un año de práctica en aprender hacerlo.

    Amo il panettone tradizionale con la glassa e le mandorle. Detesto le invenzioni recenti con cioccolata, creme varie e stranezze.

    They make it look so easy, but having a leaven that is strong enough to carry out the whole process is very difficult and demands extreme rigor in the preparation.

      yeah, it's not a recipe to do at home. It's one of the hardest recipes in patisserie/boulangerie. It's just a comercial video of course, beautiful nonetheless..

      @@Foodinies You can definitevely do it at home, but you can't improvise it or do it in your spare time. The most important things are: a good machine (like kenwood chef / kitchen aid) to make the dough strong, as the right technical flour for the same reason. Then, time, patience & discipline. Patisserie/boulangerie is like chemistry: make an ingredient 2 grams wrong, a temperature 2 degree wrong, and it ruins everythin.

      Yeah, you need a strong sourdough, and that requires a bit of training and expertise, but it's a subject that it's very well covered on youtube. Look for "how to make sourdough starter", "how to have an active sourdough starter" and you're getting closer. Nothing very complicated, but the entire process all together is really loooooong if you wanna bake a good panettone. I'm still trying to figure things out, I really dig this bread.

      There are bunch of RUclips videos for making this at home. But none of them look easy. This is more challenging and time consuming to make even when compared to croissants.

      You're not missing out. I've had it so many times and it's always disappointing. Like it's shockingly dry and unflavorful for something that has so much butter, fat, sugar, and calories. I think that the French are the only true great bakers on the planet.
