Pressure Canning Chicken a la King

- Can up this family favorite meal and keep jars of it in your pantry to have on hand for emergencies and whenever you want a quick and easy meal. It is delicious served over egg noodles, toast, rice or puff pastry. The chicken chunks and sliced mushrooms accented with red pimiento and green peas make it very festive as well.

Chicken a la King Recipe
Poach desired amount of chicken in a pot with aromatics of your choice (celery, onions, sage, garlic, etc. and cover with water. To poach, bring pot to a boil then let the chicken steep in the hot water with the aromatics for about 25 minutes. Chicken may not be completely cooked, but they will complete cooking during the pressure canning processing time. Remove chicken and cut into chunks. Strain the broth and discard the aromatics. Fill pint or quart jars about 1/4th full of the chunks. Add sliced mushrooms and onions to about 3/4s of the jar. Add a tablespoon of canned pimentos and fill the jar with broth. Follow regular USDA processing times for your jar size. When ready to serve, drain the broth from the jar and add the solids to a saucepan. Make the cream gravy using butter, flour, and cream to desired thickness. Add the solids from the jar and the desired amount of frozen peas and heat until nearly boiling. Serve.

I have been binge watching your videos to learn about canning as my grandmother has been gone for a few years and with things going the way they have been lately I’ve been thinking about how my Gramm always had a big cold room that was filled from floor to ceiling. And I swear you and her must have had the same cook book. The last video I watched you did the chicken and dumplings and now chicken a la king… both favorites of hers. Thank you for the great videos. I am so so so excited about this recipe! It’s one of my favorite dishes. Years & year ago I used to buy it to make for my lunch. It was packaged in individual servings & it was called a “Boiling Bag” & it’s usually served over toast. I think Banquet made it. Back then I knew nothing about all the preservatives & poor quality ingredients they put in. I’m glad I learned before we had our family! I haven’t bought ready made foods in 45 years, except things like cheese, yogurt & such.

This will be an excellent addition to my pantry. A delicious meal on cold snowy day, and so easy. The unused broth would be great for dumplings the next day with a can of chicken, two meals from one jar. I love it!! 💕

I love chicken ala king and nobody else in the house does. I usually buy it in cans but always have to add more chicken and theres never any peas so I always have to add them too. It looks so nice to make it myself in this method and then theres plenty of meat and I can make it myself, fresh and it will be so much nicer! Thank you for this recipe!

Thank you so much for showing how to poach the chicken. Many people talk about "par-boiling" chicken, but I wasn't sure how long to boil the chicken. I've been disappointed with cold pack chicken because of the fishy smell. I think this will be a big improvement! I look forward to your"tried and true" recipes.

I just finished canning 18 half pints of apple cherry nut butter. I have my chicken simmering for the night and will can my chicken broth and chicken tomorrow morning. I will never buy store bought broth again. There is nothing better than home made and best of all, I know what I am putting in my body! Being alone gets lonely at times so my food prepping keeps my mind busy. I cared for my cousin for the past 4 years after her heart attack and three strokes and I lost her the 17th of November, I am thankful I could be holding her in my arms as she passed over, she died 1 month and 2 days after her 84th birthday and I miss her so much. I was her last living relative and I refused to put her in a nursing home she was my rock and I was hers will always miss her.

Forgive my paranoia; if the poaching of the chicken in the beginning doesn't "quite" cook it thoroughly, could tasting the broth be a bit dangerous at that early point (before processing)? You are the best at scientifically backing up everything, so I definitely trust your judgement.
That is an excellent question! I would have been more leery had the chicken still been raw on the outside, or leaking blood. But you make a good point. Thank you.

Right this moment I’ve got 7 quarts in the canner of the chipotle beef and I had enough left to make lunch....all same ingredients into the insta pot on meat setting....can’t wait to try it! Not sure if we’ll do tacos or serve over rice like the chipotle restaurant. I think we’ll like using roast vs brisket for this one!
Here’s a thought…. How about using a 1/4 cup (or more) of that homemade dried cream of mushroom soup mix as a thickener? You could add it to a cup or two of the broth that you poured off. It’s already got the milk in it…
You could add that after canning when you open the jar, but it is not recommended to can with thickened cream soups.

I love Chicken La King, but they are getting difficult to find in the store. Coming in small cans that are a bit pricy too. So this is perfect! I like that you don't edit out what you think would of worked better with this or that. This will be my next project, perfect as I like canning in pints jars. Thanks for the vid!

That looked really inviting! Thank you for the idea with regard to just poaching the chicken. I recently followed the advised method for canning chicken soup, with the home made stock and I felt that the time the cooked chicken had to be in the pressure canner was excessive. I haven't tried that soup yet, it may be fine, but it seemed like a long time to process given that the chicken is already cooked. Thank you for the demonstration and advice!

Vox in Tenebris: It isn't that the processing time is long to cook the chicken. The processing time is long to make sure the chicken gets heated all the way through to prevent botulism from forming.
@@OldAlabamaGardener I agree, it doesn't matter if meat is cooked, it must pressure process the entire amount of time for meat to be safely processed.

I understand 'tossing out' the aromatics, but have you ever tried to puree those and add it to the broth? It would obviously make a thicker kind of broth...just curious.
I tried cutting them up and using them in soups and they are completely flavorless, so I don't do that anymore. They would add bulk to the broth but not sure about any food value. Maybe some fiber. Anyway, something to think about. Thanks.
Chicken a la King is a favorite of ours. While I love the richness of half and half, could you use reconstituted not fat dry milk from food storage ( in emergency situations). Also I made your beef stew recipe. Oh my goodness. It was so good. Beef Stroganoff and this Chicken a la King is next. Your videos are my go-to. You and Jim do an excellent job and always scientific based.
Thank you so very much. We really appreciate your kind words. Yes you could certainly use powdered milk in times of emergency or any time for that matter. Truth is, that is generally what we use on a daily basis!
