  • Learn how to make Dutch French Fries with Homemade Fries Sauce. These twice-fried French Fries are perfectly crispy on the outside and fluffy/crumbly on the inside. Paired with the "frietsaus" or "Dutch Fries Sauce," Everything is homemade! Vincent Vega (Pulp Fiction) was wrong.... they don't put mayonnaise on French Fries in Holland, they put "Frietsaus" or "Fries sauce" on them. It looks like mayo, but is actually a bit sweeter, smoother, and lower in fat. These double-fried potatoes will sure be a hit with your family!

    I have tried for years to perfect the frying of the Dutch Patat. I have missed that incredible flavor, crunch and just overall perfection of Patat for decades! I watched your video to completion and am excited to try and make these exact fries.
    I had no idea they had to be soaked in water and placed in the oil dry. Thank you for this awesome video. I am subscribed and will be looking forward to watching and learning much more.

    Ik kan me patat als jong kind goed herinneren. Mijn vader had het niet breed, maar nam moeder en ons kinderen er altijd ergens op uit in de weekeinden. Wij leerden de patat zónder de friet saus te waarderen uit zuinigheid. De toeslag voor een scheut met werd als duur beschouwd.
    In mijn tienerjaren in de vroege 70er jaren ontwikkelde mijn voorkeur zich voor patat met satésaus, wat zeker na een paar biertjes teveel de zaak in het gereel hield.
    Ik ben na de universiteit in de VS blijven steken en waardeer jouw duidelijke instructies om alle mogelijke lekker heden van vroeger thuis hier nu zelf te kunnen bereiden. Houd het vol!

    When living in Holland (Geleen) as a boy , we had the frite sauce on the fries we bought in the markets.

    I remember visiting my Oma and Opa in Den Hauge as a child (several times). I remember buying patat frits and even kroketten in vending machines near their apartment. I loved saving my dubbeltjes and kwartjes to go to the machines.

      Yeah, going to a snack bar can be a trip to heaven here in the Netherlands. I'm living near alkmaar and had a real treat eating a " Jacky Chan" burger with fries at snackbar Jacky... I left being satisfied and feeling a complete different human being...

    So my mother came from south of holland . I’ve been there every year from 1 till around 20 . I have nothing but great memories of patat , pufija ,
    And my favorite croketa , my mom has past but I have come up with my own ponacook recipe . Almost just like my grandmother and mom .

    I just came back from checking out Noord Brabant and noticed lots of people were eating friets with satésaus. I tried it and it tasted like warm, savoury peanut sauce and almost preferred it over the frietsaus xD
    I’ve also seen some Dutch households boil their potatoes in water then coat them with flour before frying.

    Great video, this has me wanting to make some fritjes met right now. The first time I remember having fritjes met was at Dordrecht market you could almost smell the heavenly aroma getting off the ferry. I lived in Papendrecht and recall having fritjes met at my best friend’s birthday party. Have you tried fritjes met Japanese Kewpie mayo? It’s the closest thing I’ve tasted next to the real fritjes sauce.

    I was stationed at Camp New Amsterdam (Soesterberg, near Utrecht) back in the 80's. Loved the friets met - this brought back a lot of fond memories. I need a recipe and a skillet for Poffertjes too!

    Loved fritsaus on fries when I was stationed in The Netherlands in early 80's. I wonder if air frying the fries might work, as there's no oil to eliminate?

    Hi Toine. thanks for the recipe, I fell in love with frietje met when I was in Rotterdam in the 70s, there was a small snack bar opposite the dock where my ship was moored near the Maas Tower, which made the best fries and the sauce was fantastic, for years I was not able to get frietsaus type mayo here in the UK until lidls started trading here, how ever they have now changed the recipe so it now tastes like crap french mayo, will try you recipe

    You said about being careful when using a mandolin.
    There is a clip from a cooking show here in the UK of a celebrity chef called Rick Stein.
    He says you should use the guard when using the mandolin, but he won't as he knows what he's doing.
    He then throws it across the kitchen as he slices his finger.

      The dish was conceived in 2003 by Nathaniël Gomes, a Cabo Verdean hairdresser in the Rotterdam district of Delfshaven, who one day at the neighboring shawarma store "El Aviva" asked to combine all his favorite ingredients into one dish. He began regularly to request what the restaurant called "the usual order for the kapsalon". Other customers noticed and started to order the kapsalon too, and it became a "hit", soon being demanded in nearby snack bars.

    Hoi Toine, ik zie net dit filmpje en ik ben gelijk al fan van je. Ik hou mij ook veelvuldig bezig met alledaagse (bij)gerechten en sauzen, kruidenmengsels etc die weliswaar alledaags zijn, maar dusdanig dat weinigen ze zelf maken. Zoals zoete chilisaus, alles van de "echte Chinees" dus dat het daadwerkelijk smaakt als van de afhaal, maar ook ketchup die naar Heinz smaakt en curry die naar mijn favoriete Hela curry smaakt. Ik vind dan ook bepaalde recepten van de site Top secret recipe's ook geweldig, maar zou zoiets ook graag zien mbt Nederlandse producten. Zo heb ik mij ook ooit veelvuldig bezig gehouden met frietsaus en kwam ook al gauw tot de conclusie dat Xantaangom toch wel echt nodig is. Ondanks dat me dat wel duidelijk was toch nog even geëxperimenteerd met andere meer huis-tuin en keuken verdikkers, maar daar had ik dan zoveel van nodig dat dit toch de smaak ging beïnvloeden. Enfin leuk dat jij dit hebt gedeeld, ik ga het absoluut snel maken en die heerlijk friet zal vast en zeker geweldig smaken. Oh ja, nadat ik mij eerst de satés- cq pindasaus van de Chinees heb eigen gemaakt, ben ik al even bezig met een satésaus zoals de aanlengsaus van Wijko, want voor friet blijft die, al dan niet "gepimped" toch wel zo goed. Mocht je daar een goede versie van weten uit te vinden.... Zo nu ga ik kijken naar je andere video's. Hartelijke groeten, Jeroen.

      @@ToinesKitchen Haha, leuk! Bedankt voor je reactie. De aanlengsaus, degene van Wijko die aangelengd dient te worden met water is aanmerkelijk lekkerder dan de kant en klare saus. Degene die moet worden aangelengd wordt dan ook in vrij veel friettenten gebruikt. Ik ben benieuwd hoor, veel succes Toine!! Groetjes Jeroen.

      Yes, you absolutely can. Just make sure they are COMPLETELY cooled off before freezing them. I will freeze them on a cookie sheet, and then put them in a bag.

    It used to be that patatje speciaal was with ketchup and not currie ketchup. You had to specify which one you wanted. Now the standard looks like its currie ketchup. I still have to get used to that.

      Interesting. Everything I’ve read said it was invented in 2003. And I definitely don’t remember seeing it in snackbars when I left in 1995.

    Goed werk Toine! Wat de mayo betreft weet ik niet of dat de standaard mayo is in ons land: Erg zoet. Onder de rivieren houdt men meer van een wat zuurdere versie, boven de rivieren heeft men liever wat zoetere mayo. De mayofabrikanten houden daar zelfs rekening mee.

      Dankjewel... ik heb een frietje met in veel plaatsen gegeten in Nederland (een moeder uit het zuiden, en een vader uit het noorden), en toch eigenlijk bijna overal was het frietsaus. Maar, het zou best kunnen dat dat nu anders is. Ik weet wat een Kapsalon is, maar heb het zelf nog nooit gegeten.

      Wat je bij de snackbars krijgt in Nederland is meestal fritessaus, een zoetere saus dan mayo en minder vet.
      Wettelijk is in Nederland vastgelegd dat mayonaise minimaal 70% vet en ten minste 5% eigeel bevat. Producten zoals fritessaus en halvanaise bevatten minder dan 70% vet en mogen daarom geen mayonaise worden genoemd. Door het lagere vetgehalte in deze sauzen, zijn de smaak en structuur ook anders dan mayonaise. Om de producten toch zoveel mogelijk op mayonaise te laten lijken bevatten deze sauzen verdikkingsmiddelen zoals zetmeel en xanthaangom, suiker en voor de houdbaarheid ook conserveermiddelen. Bij échte mayonaise is het niet nodig om conserveermiddelen en verdikkingsmiddelen te gebruiken.

    I think it differs per snackbar if they use frietsaus or mayonaise. I hate frietsaus, it's way to sweet and the sourness of a proper mayonaise really breaks the richness of the fries.

    Sorry cheff patatje met of frietje met hoort eigenlijk mayonaise bij echter omdat het zoveel goedkoper is om frietsaus te gebruiken doen ze dat zo alleen eigenlijk een beledeging voor de echte met maar goed daar is Nederland goed in dingen veranderen die van oorsprong anders zijn verkopen xD

      En wettelijk gezien mogen ze het niet eens patat met mayonaise noemen, want fritessaus bevat minder vet en eigeel, mayo moet tenminste 70% vet en meer dan 5% eigeel bevatten anders mag het geen mayonaise genoemd worden
