Every country and culture has their own idea of barbecue, and in the United States alone there are at least five or six different styles. Heck, even Texas has four or five different ways to barbecue but it is most known for the low and slow Central Texas style with briskets, pork butts and sausage.
But when you make your way down south to the border, barbecue means fajitas, sausage, chicken halves, tablitas, loaded ribs, finger ribs and more. It’s a whole other world of barbecue in the Rio Grande Valley where we are lucky to be able to experience BOTH of these styles within a few miles of each other.
In this video we’re gonna stop by 492 BBQ in Palmview, TX where owner/Pitmaster Lupe Garza cooks up delicious platters of fajitas, sausage, beef short ribs and even LAMB BREAST! Plus a whole buncha other delicious meats and traditional South Texas sides. Growing up in South Texas this is the carne asada style of barbecue that I grew up with and what I cook at home most of the time.
After that feast, and a nap,drive we’re gonna take a ride across the Rio Grande Valley to Teddy’s BBQ, a more traditional Central Texas Style joint that holds a coveted spot in the Texas Monthly Top 50. Here at Teddy’s, Co-Owner/Pitmaster Joel Garcia is blazing his own trail by cooking all the popular smoked barbecue meats like brisket and pork ribs, while also offering some unique, must try twists on tradition like the chile pequin sausage and beef fat flour tortillas.

This video makes me a little emotional because of the love that goes into the TexMex culture. The food is an expression of a deep love for family and friends. Love for Texas And Mexico.
I think that goes for any dish. Ask any auntie, grandma and mother and they’ll say their dish is fill with love. It isn’t only exclusive to one kind of cultural food.
True 88…. It is just my experience being born and raised in South Texas.
When I was in college, two of my friends were from the McAllen area. Their families would come to visit on parents weekend and it became the biggest party of the year each time. The dads would take over the big grill. They brought a ton of skirt steak, vegetables, homemade salsas, and different wood each year. The Moms went in the house and made pico and guacamole and rice and tortillas and I'm drooling while I'm typing. The Dads slowly worked their way through all the meat while about 50 of us ate. They also worked their way through a bottle of mezcal each. Good times.
No shit!!!! Yes same with my daughter when she was in Sul Ross. We'd load up the car with groceries (really) yesssss groceries. And you better believe we had a hell of a cook out. Friends and all were considered family!!!!💞💓 puro amor. THAT'S TEXAS FOR YA!!!!!

BBQ is a family occasion that brings everyone together. So, that is how we prefer to cook. Even the neighbors know you are doing something special. Everyday that I can.

My experience coming from Kingsville and eating all over Texas is in South Texas we use Mesquite. That gives us our unique flavor in asada and bbq. The hill country oak and pecan is good but its not home. :)

It’s great to see the success of our Latinos. I’m retired after 40 years of the restaurant industry. Living in Denison Tx you never see BBQ Fajitas. Fajitas take a process of tenderizing and spices. In Edinburg Aguilars meat market had the most tender fajitas ready to grill.
In north Texas the fajitas are horrible and tough.
I enjoyed hearing the Spanglish!!! In the late 70’s Rick Hinojosa and I opened the first Sonic Drive In In Weslaco. Good memories!!

Of all the parts of the country I went to while trucking long haul, south Texas is probably where I miss the most. So much great food. Gonna have to make a roadtrip to the Rio Grande Valley area one of these days and try these bbq spots you keep showing us on here, Arnie.

Can absolutely recommend you go check it out. I'm in Louisiana just nearby so I visit Texas frequently and it's legitimately one of the best food states... Take a trip and plan a BBQ tour it's totally worth it!

We cook ribs the same here in South Arizona. You can't buy it in restaurants, buts that's how we do it.

Texas is the only state that feels like a separate country. So many great things about the state including the best BBQ your mouth will ever taste.

Teddy's barbecue use to be called another name, it just got back up and running about a year ago ... There is this one place called Joes fat boys barbecue in Elsa, about 9 miles from Weslaco, maybe you should try next time ...
Woo hoo….South Texas. Although I haven’t been back since I was a kid I was born in Weslaco and my wife was born in Edinburg but been in California since. That carne asada makes me want to go back just to try it. 😋

I agree with Arnie. Carne Asada is different to everyone and there’s no wrong way to do it. Texas carne asada looks great. In Southern California our Carne Asada’s are different. We primarily eat corn tortillas with carne asada, different cuts of beef such as diezmillo or ranchera, Al pastor tacos, chiles gueros & toreados, grilled cebollitas (green onion), sausages, chicken thighs, salsa from the molcajete, pico de gallo, red rice, beans. So much more I can’t think of.

I am black and I’ve been to the valley for over 15 years I love Anitiquas BBQ in Mercedes right in front of the fairgrounds when we come down there I stay off 83 and airport at the super 8 I love the Valley and the Valley loves me ❤️ #Tejas #Texas
