I went to Texas and Louisiana, some of the best food I've ever had, I think I gained about 15lbs and it was worth every single one! Then I moved to Pennsylvania (from the UK) and it was so different and not in a good way, the food in the north doesn't even compare to the food in the south, whatever incredible magic the south is doing to it's food, I wish it would move northwards!
I grew up in Texas. I took our good food for granted. I thought everyone knew what good BBQ, Tex-Mex and Southern foods in general was like. Then I started traveling around the country and realized every region of the USA has its own food traditions. Some were amazing. Some…… not so much. But I’ll always have a soft spot in my heart for Texas BBQ, Tex-Mex and Southern food. It always makes me happy.
I reside just northwest of Houston, have several BBQ restaurants to choose from as well as the smoker in a parking lot (my favorite), Tex-Mex galore. Just a short drive is Tomball with two legendary “country kitchens”, Mel’s (just reopened after a catastrophic fire) and Goodson’s. Sprinkle in the Louisiana vittles post Katrina. Drive into Houston and you’ve arrived to the culinary capital of the U.S.A. Pick a cuisine you’ll find it.
Chicken too. Many places don't do it, but a properly done smoked thigh is a thing of wonder. Especially if you're a huge smoke fan. Easy to dry out, though, because the pieces are smaller than most other things, so you can tell if a place pays attention to it.

Beef & pork ribs, brisket, shredded pork, etc. In TN, I don't think that we had _any_ beef. It was all pork (ribs & shredded), & maybe some fried chicken or a deep fried turkey.

I was there in Austin travelling on vacation this past Tuesday just a few days after this was released. Never had true TX BBQ before. Not a single thing they said was an exaggeration. The food and the experience were divine. Definitely going back. TX was awesome and the people so friendly.
I was there in the fall for the first time, didn’t believe the hype until I tried it. Went to Franklins, not sure I would do it again because of the wait, but dang that was some of the best food I’ve ever had.
Texas has Beef BBQ and other Southern States have Pork BBQ too and sometimes it’s a hard time choosing. Not to mention it’s the first time I heard about the Turkey!

Banana Pudding is a holy sacrament in the South. If you need a written-down recipe, you are a beginner. I have 50 years of making it by how it looks and feels when stirring that dreamy custard. Still, I think I can improve it!
@@thebritstry that mouse-like dessert is what we call "pudding" here. It's a creamy flavored gelatin dessert, commonly in banana, vanilla or chocolate. We also have less common pudding flavors like pistachio, rice pudding, and tapioca pudding. As easy to make as fruit Jell-O 🙂
I ate at Terry Black’s last year. It was all incredible! One of the best things on the menu they didn’t try, the creamed corn. I don’t know how they make it, but it’s ambrosia, the food of the gods, truly.
In point of fact, Terry and Nicola do not have an accent. They, being British, are speaking the mother tongue in its native form. We Americans are the ones with the accent. However, if a sufficient quantity of Texas brisket is applied to the tongue, we will send them home with a distinct Texas Southern twang.

When I went to Houston TX in 1988 that was the best brisket I ever had. When Nicola talked about the dry turkey in the UK I busted out laughing 'cause I've been there and ate it - she ain't lying lol.
Having lived in San Antonio Texas for 4 years, I can honestly say that barbecue in Texas is king. Each smokehouse has their own flavor and they're All unique and delicious. It's best enjoyed without barbecue sauce. God bless Texas 🤠

As an American married to a Brit, I had the same experiences introducing her to Southern bbq and sides when we lived there years ago. Now that we've moved back to the UK with our daughter, I try to emulate what I can to keep us connected to that slice of American culture. Now you know why Texans are so happy. We are surrounded by bbq, southern food, and Tex Mex. Do keep in mind that it’s about to be summer in the south. That means it is going to start getting to 100 degrees and hotter. If you plan on making visits to the south over the summer, plan accordingly. If you’re not used to the heat, it can hit you hard.
I'm in Houston we have that and so much more. All of the Cajun and Creole food from Louisiana. All of the Gulf Coast seafood. Tons of international food. We have a Pho shop on every corner. We even have hybrids like Viet-Cajun. Viet-Cajun crawfish will change your world.
I know right. I saw a cool documentary about a place in Japan doing texas bbq and texans went there to rate it and it was legit. The locals love it. I find it all so fascinating how good food is good food all over the world.
There have been a lot of videos lately of people from foreign lands trying Texas BBQ. I love them all. These videos make me thankful that I am lucky enough to be a native Texan.
We are so lucky to live in the US, because of our unlimited food options. I love it when foreigners talk badly about American cuisine, and then have a chance to try it in person, Then, they usually say, WOW or OMG, is this good.

I live in a small rural community, but in a 40 minute drive I can have more or less authentic food from like 20 countries!
That's a bit condescending. England is quite small compared to the US, and they have a long rich history which they've held onto preserving. In the US we're all about progress-- not tradition. Our progress touches everything from politics to religion to cuisine.
Central Texas has long had large Czech, Polish, and German communities, which means the sausage game here is on point. Elgin sausage (like they eat in the vid) is world class stuff

It's a great find when you come across food that makes you both laugh and cry. Most people think I'm strange for that. I feel for them that they don't experience that.
for 19 minutes and 58 glorious seconds, Andrew and Nicola were American, happy to have y'all, come back anytime. Also, what Nicola said about not using the BBQ sauce warmed my heart. Good Beef BBQ doesn't need sauce. Pork, Chicken, and Turkey can get sauce, Beef should stand on its own. And on a further side note, you can judge a BBQ place by their Banana pudding. If you order banana pudding somewhere and it is Banana flavored pudding, don't ever return.
You're right... but a really good sauce is another art form. You wouldn't want to just eat it with a spoon like soup, so putting a little on the BBQ can be an excuse just to taste the sauce. A lot of us had mothers that would make banana pudding at home. I remember having it often on Sunday evenings, when the Wonderful World of Disney was on television. But as good as that was, it never quite compared to banana pudding at a BBQ joint.
So, are y'all ready to move to Texas yet? I love that you ate it without barbeque sauce. If it's good, it doesn't need it. The sauce is for when you have chopped brisket sandwiches usually. I think that Terry Black's seasoning is just a pure salt and pepper. The rest is good wood smoke. I have to tell you, I moved to Texas from California a long time ago and when I tasted brisket for the first time it blew my mind. How can anything so simple be so delicious? The rest of the food there is really good too. The potato salad isn't too heavy and mayo forward, And the banana pudding...OMG. I'd stand in line at 6am (and have) for Terry Black's. The next time that you're in Texas, please come down South of Houston. We're famous for the Tex-Mex, mesquite brisket and seafood. You haven't lived until you've had char grilled oysters on the half shell with garlic, butter and Parmesan cheese on them. Thanks for another great video!

I live on the coast of Texas! As a young kid, we ate alot of seafood. Gumbo, fred fish and shrimp, boiled shrimp an crabs, oysters. We caught everything we ate our self! And my mom opened up a barbecue place in the 70s! With a secret family barbecue sauce! But I'm like y'all, I like my meat without the sauce. Family get-togethers was always barbecue! But Tex-Mex maybe my favorite. We also ate a lot of what is called nowadays soul food. But it was just country cooking back then! We was raised up poor, but turn out we ate like rich people! Lol
I feel ya. Born/raised in Florida where we got a lot of our seafood. Even scallops, blue crab and crayfish (lobster size salt water ones but No claw). I moved and miss Florida and it's abundance.

That's funny. I've got 2 racks of beef short ribs in the fridge ready for the smoker in the morning. Glad ya'll liked our grub. And a general rule of thumb. If central texas bbq is done right. Sauce is not needed. So you guys are spot on there.
As someone that grew up in nyc I had an opportunity to live in Texas for 2 1/2 months a few years ago for work I still wake up dreaming of one day moving there permanently. The people, the culture the food and a feeling of belonging…

banana pudding is THE dessert of the south. It's what holiday dinners at grandma's house is made of. lava cakes you can get delivered from dominos. not remotely in the same realm of dessert.
When you got the tour of the smokers, and the Pitmaster opened the doors, the Heavens opened up. Rays of sunshine and rainbows shown down on those briskets. They, indeed, are the true pot of gold! That is BBQ at its finest there is, right there! It don't get no better!
So, guys, Texans typically use a coarse salt and pepper rub (Dalmation rub) to coat the meat (brisket - breast cut of the cow) before smoking. It forms a crust called the bark. Salt penetrates the meat from this drying brining technique. Low and slow smoke and convection heat for a long time, and it comes out juicy and tender. Sometimes, they may squeeze in a little garlic powder. Happy eating. 😊😊

I remember cutting class at Calhoun and going to Big Bob Gibson's in Decatur for lunch. Their homemade pies are incredible. Chocolate, coconut, pecan, lemon meringue, etc. Their white sauce for chicken is very good. The white sauce recipe is online.
That Bama white sauce is a RELIGION down there. Personally, I consider myself the BBQ TRIFECTA-got family in Bama and Texas, and I live in North Carolina. Y’all need to come to North Carolina. Our Eastern and Western pork BBQ is world-class!

Smoked turkey is the most underrated bite in barbecue. Poultry takes on smoke like nothing else.

I was there in Austin travelling on vacation this past Tuesday just a few days after this was released. Never had true TX BBQ before. Not a single thing they said was an exaggeration. The food and the experience were divine. Definitely going back. TX was awesome and the people so friendly.
I was there in the fall for the first time, didn’t believe the hype until I tried it. Went to Franklins, not sure I would do it again because of the wait, but dang that was some of the best food I’ve ever had.

Texas has Beef BBQ and other Southern States have Pork BBQ too and sometimes it’s a hard time choosing. Not to mention it’s the first time I heard about the Turkey!

Banana Pudding is a holy sacrament in the South. If you need a written-down recipe, you are a beginner. I have 50 years of making it by how it looks and feels when stirring that dreamy custard. Still, I think I can improve it!

@@thebritstry that mouse-like dessert is what we call "pudding" here. It's a creamy flavored gelatin dessert, commonly in banana, vanilla or chocolate.
We also have less common pudding flavors like pistachio, rice pudding, and tapioca pudding.

I ate at Terry Black’s last year. It was all incredible! One of the best things on the menu they didn’t try, the creamed corn. I don’t know how they make it, but it’s ambrosia, the food of the gods, truly.
They add a little cinnamon and nutmeg. It’s like Mexican street corn.

In point of fact, Terry and Nicola do not have an accent. They, being British, are speaking the mother tongue in its native form. We Americans are the ones with the accent. However, if a sufficient quantity of Texas brisket is applied to the tongue, we will send them home with a distinct Texas Southern twang.

When I went to Houston TX in 1988 that was the best brisket I ever had. When Nicola talked about the dry turkey in the UK I busted out laughing 'cause I've been there and ate it - she ain't lying lol.

Having lived in San Antonio Texas for 4 years, I can honestly say that barbecue in Texas is king. Each smokehouse has their own flavor and they're All unique and delicious. It's best enjoyed without barbecue sauce. God bless Texas 🤠

Do keep in mind that it’s about to be summer in the south. That means it is going to start getting to 100 degrees and hotter. If you plan on making visits to the south over the summer, plan accordingly. If you’re not used to the heat, it can hit you hard.

I'm in Houston we have that and so much more. All of the Cajun and Creole food from Louisiana. All of the Gulf Coast seafood. Tons of international food. We have a Pho shop on every corner. We even have hybrids like Viet-Cajun. Viet-Cajun crawfish will change your world.

I know right. I saw a cool documentary about a place in Japan doing texas bbq and texans went there to rate it and it was legit. The locals love it. I find it all so fascinating how good food is good food all over the world.

We are so lucky to live in the US, because of our unlimited food options. I love it when foreigners talk badly about American cuisine, and then have a chance to try it in person, Then, they usually say, WOW or OMG, is this good.
@@DaveBrazda-b4f They don't realize that our "cuisine" is ALL theirs, from around the world, combined together! And in some cases done better, merged with other cultures'. Plus our own. I live in a small rural community, but in a 40 minute drive I can have more or less authentic food from like 20 countries!
That's a bit condescending. England is quite small compared to the US, and they have a long rich history which they've held onto preserving. In the US we're all about progress-- not tradition.
Our progress touches everything from politics to religion to cuisine.
My Texan pro tip is: Brisket slice, bread, pickles, onion, and bbq sauce folded like a taco. I always do this every time I get Black's.

Also, what Nicola said about not using the BBQ sauce warmed my heart. Good Beef BBQ doesn't need sauce. Pork, Chicken, and Turkey can get sauce, Beef should stand on its own. And on a further side note, you can judge a BBQ place by their Banana pudding. If you order banana pudding somewhere and it is Banana flavored pudding, don't ever return.

You're right... but a really good sauce is another art form. You wouldn't want to just eat it with a spoon like soup, so putting a little on the BBQ can be an excuse just to taste the sauce.
A lot of us had mothers that would make banana pudding at home. I remember having it often on Sunday evenings, when the Wonderful World of Disney was on television. But as good as that was, it never quite compared to banana pudding at a BBQ joint.
So, are y'all ready to move to Texas yet? I love that you ate it without barbeque sauce. If it's good, it doesn't need it. The sauce is for when you have chopped brisket sandwiches usually. I think that Terry Black's seasoning is just a pure salt and pepper. The rest is good wood smoke. I have to tell you, I moved to Texas from California a long time ago and when I tasted brisket for the first time it blew my mind. How can anything so simple be so delicious? The rest of the food there is really good too. The potato salad isn't too heavy and mayo forward, And the banana pudding...OMG. I'd stand in line at 6am (and have) for Terry Black's. The next time that you're in Texas, please come down South of Houston. We're famous for the Tex-Mex, mesquite brisket and seafood. You haven't lived until you've had char grilled oysters on the half shell with garlic, butter and Parmesan cheese on them. Thanks for another great video!

I live on the coast of Texas! As a young kid, we ate alot of seafood. Gumbo, fred fish and shrimp, boiled shrimp an crabs, oysters. We caught everything we ate our self! And my mom opened up a barbecue place in the 70s! With a secret family barbecue sauce! But I'm like y'all, I like my meat without the sauce. Family get-togethers was always barbecue! But Tex-Mex maybe my favorite. We also ate a lot of what is called nowadays soul food. But it was just country cooking back then! We was raised up poor, but turn out we ate like rich people! Lol

I feel ya. Born/raised in Florida where we got a lot of our seafood. Even scallops, blue crab and crayfish (lobster size salt water ones but No claw). I moved and miss Florida and it's abundance.

banana pudding is THE dessert of the south. It's what holiday dinners at grandma's house is made of. lava cakes you can get delivered from dominos. not remotely in the same realm of dessert.

So, guys, Texans typically use a coarse salt and pepper rub (Dalmation rub) to coat the meat (brisket - breast cut of the cow) before smoking. It forms a crust called the bark. Salt penetrates the meat from this drying brining technique. Low and slow smoke and convection heat for a long time, and it comes out juicy and tender. Sometimes, they may squeeze in a little garlic powder. Happy eating. 😊😊

I remember cutting class at Calhoun and going to Big Bob Gibson's in Decatur for lunch.
Their homemade pies are incredible. Chocolate, coconut, pecan, lemon meringue, etc.
Their white sauce for chicken is very good.

That Bama white sauce is a RELIGION down there. Personally, I consider myself the BBQ TRIFECTA-got family in Bama and Texas, and I live in North Carolina. Y’all need to come to North Carolina. Our Eastern and Western pork BBQ is world-class!
