I feel like nothing says Aries Kitchen like forgetting the garlic and just raw-doggin them in your hand with some olive oil and yeeting them into the hot oven.

I would watch a 100 more episodes of this. I love stardew valley and this was a wonderful amount of chaos
Texture improvement: 1)after you cube up your eggplant and before you oven it, chuck those chunks in a bowl of salty, salty water. This osmosises the excess water out of the eggplant cells so that after you cook it, itll be more firm and chewy. You wanna do the salt soak for at least an hour, or up to like... 12h, possibly a whole day if you wanted.
2) id use some flax meal either in addition to or instead of the powdered egg replacer. I usually use powdered too, but there are certain things that bind up better with flax and burgs are one of them. You wanna put some fine ground flax in a lil hot water, let it get all jelly, and add that to the burger dough.
3) more optional but if you swapped (all or some proportion of) the wild rice for a glutinous/sticky rice, that should also help. Brown glutinous rice would probably be nice in this to go with the rustic vibes.
4)i hate this advice too-i like to cook hot and fast-but it will bind up a million times better if you do the final pan patty cook low and slow. Sorry.
what are your thoughts about the liquid egg replacer since it's a bit thicker do you think that could help though still might need flax meal.
Casava flour is a great thickener, as a gluten and grain free cook it really works much better for me than alot of gluten free flour blends.

Add water to the powder egg replacer!!! When you sub in a powder for a liquid, you lose moisture. The dryer consistency can lead to a crumbly texture

@@symptomoftheuniverse3862 the ratio was off for this particular recipe someone also suggested using flax meal too which i think is a great idea. this step is why it was crumbly because this is the glue like he said and so this step has to be right.
@@anitacrumbly Okay, but the comment was he should have added water to the dry egg substitute, she was using multiple exclamation points. I and others informed her he did. Be honest I am not well versed in this kind of cooking. Chia seed is a good alternative.

bean burgers always squish out, I don't know how people are making ones that don't. I find that adding to the mince something raw helps and I like to use gram or lentil flour mixed with water for the binder, so maybe using just egg would've been better?

The pickled carrots are a great substitutes as vegan options for cold smoked salmon or gravlax recipes :) as someone from scandi/north european salmon loving country I can say they were a big hit when ppl first figured this out

The use of rice and eggplant reminds me of Burgerlords and their vegan burger. It doesn't use Beyond Meat but it does use a medley of grains and vegetables. I wonder how theirs stay together
