Those look great. I been cookin oxtail 30 years and alot of people on here cookin em all wrong. You have to cook em long enough to break down that collagen so they will get sticky. And this dude accomplished it

Looks yummy! You can use the tip of your knife to explore for the cartilage gaps between bone. with a sharp knife it will cut through with a VERY satisfying crunch. No saw required. Hope this helps!

Do you have to braise oxtail? Wondering if I can just wrap them in foil with some tallow. This is my first time smoking them. I don't want to mess them up.

I'm not against the amount or afraid to season in typical smoking fashion, but I was wondering if the pepper flavor dies down when smoked for that long or whether it keeps most of it in the final flavor. Thanks

This is a 2 year old video so I don't think you will see this but, you should add some Jerk seasoning and or Curry powder to the rub to get some more amazing flavor to the oxtail!!!!!
